Breakfast Sausage Crostini

Mother’s Day is right around the corner which is actually quite surprisingly in a way. I am not sure if it is just me, but it feels like this month is flying by! When did April end and May begin? It seriously feels like fall here in New England which is actually cruddy but that means the unofficial start to summer is on its way. This recipe for Breakfast Sausage Crostini really hit the spot this morning, and it is PERFECT Mother’s Day breakfast idea!
Every mom deserves to be spoiled a little more on Mother’s Day. Just think of all the times your mom stood up with you all night, or how many breakfast she selflessly prepared for you–all while she skipped her own. A little breakfast in bed prepped by a spouse, or kids is just one small way to show that special mom in your life how much you care.
Truthfully, I know that kids are not the best cooks out there so I wanted to share a recipe that was easy and involved basic ingredients. We used Johnsonville® Fully Cooked Original Breakfast Sausage Patties rather than the traditional links. These patties can be found in the refrigerated section of most major retailers near the other fresh sausage products. They come with 8 in a pack, and are spiced perfectly. Plus, since they are fully cooked, just a minute in the microwave will do!
The Johnsonville® Fully Cooked Original Breakfast Sausage Patties were the perfect size for Breakfast Sausage Crostini too. I love crostini and crunchy bites so this was a no brainer for me. If you like fluffy scrambled eggs, sausage, onion, pepper, and cheese, then this recipe is for you!
Want to make these Breakfast Sausage Crostini? Here is what you will need for 8 bites -these are VERY filling!
- 1 package of Johnsonville® Fully Cooked Original Breakfast Sausage Patties
- 1/2 cup of shredded cheese blend
- 1 stalk of green onion chopped
- 8 pieces of crostini. You can use a narrow loaf of stick bread to make your own. Just slice them about 1/2 inch thickness.
- 1 sweet red pepper, slice enough for 16 thin slices, and chop the rest
- 3 tablespoons of red onion chopped
- 4 eggs
- 1 tsp of butter
Directions:
Ad your butter to a small skillet, and melt. Place veggies in and cook until just tender. Once they are done, remove them from the heat, and set them aside.
Carefully toast your bread for about 2-3 minutes per side.
Scramble your eggs in the same pan as the veggies
Once they are done, remove them from heat.
Cook your sausage in the microwave for one minute.
To assemble your crostini, add the eggs to each piece of toast, 2 small strips of pepper, and a sausage patty.
Top each patty with cheese, and place them in the oven for 3 minutes to melt the cheese (350 degrees or less)
Once done, top with remaining chopped veggies, and serve! These are super delicious and a meal that is easy to eat, and sure to make your mom or wife smile.
