Buffalo Chicken Cracker Stackers: The Perfect Big Game Appetizer!

Can you believe that the Big Game is already next Sunday? I guess you could say that us New Englanders lucked out because our team will be a headliner in that historic game! We’re excited because that means we get to party and watch the Big Game with some super delicious appetizers, and foods! I have already started my menu plan which includes my Buffalo Chicken Cracker Stackers.
Let’s face it, the Big Game is all about good food, exciting commercials, and the coveted half time shows. Ok, so maybe that is just me thoughts on it, but you really cannot deny that football games=delicious and tasty snacks, and appetizers. Typically, I make my traditional buffalo chicken dip, but this year I wanted to switch things up a bit, and make my go-to appetizer more like a finger food.
Then came the genius idea to spread some buffalo chicken dip on Ritz crackers and make little sandwiches, or “stackers“. Best of all, they were actually easier than I had anticipated to make too! No one wants to be slaving in the kitchen before such a hot game so they totally work!
Confession: the main star of my Buffalo Chicken Cracker Stackers are the buttery Ritz Crackers. I found tons of varieties at my local Walmart store in the cracker isle. Who knew Ritz Crackers even came in “Bacon flavor”?
Gosh, there were so many flavors, but I decided to go with the original variety which happens to be my personal favorite.
Now, let’s get to business, and make some tasty snacks!
Do you want to make your own Buffalo Chicken Cracker Stackers?
Here is what you will need:
- 1 package of Ritz Crackers
- 1 1/2 lbs of cooked, pureed chicken. I always pan fry mine with some spices to get the most flavor out of it.
- 1 8 oz bottle of blue cheese dressing
- 1 8 oz package of cream cheese
- 5 ounces of hot sauce
- 2 tablespoons green onion
- 1/2 cup shredded cheddar
Pan fry, or boil your chicken. Again, I prefer my chicken to be pan fried because a nicely seasoned, and flavorful chicken breast makes the dip that much better.
Once the chicken is cooked, puree it in a food processor until finely shredded.
Add your chicken to a large bowl along with the cream cheese, cheddar cheese, hot sauce, and blue cheese; mix well
Once the buffalo chicken mixture is done, carefully add about a tablespoon of mixture to each Ritz Cracker; garnish with green onion, and the add the top cracker at a slant for aesthetics.
Honestly, my pre-game party guests LOVED these little appetizers because they still contained all the flavors of buffalo chicken dip, but in a much more portable way!

Only I like using rotisserie chicken for so many things and that is what I have handy and in the freezer which will also save me time from having to fry or boil some chicken.
