This tomato and ricotta toast recipe was inspired by the Burst-Tomato Toasts Recipe found in the February 2016 issue of Real Simple® Magazine. It’s a simple lunch recipe that uses ripe cherry tomatoes, ricotta cheese, ciabatta loaf, olive oil, and spices.
How To Make Tomato and Ricotta Toast
These take about 10 minutes to construct and they are so delicious with some lime-infused ice water. The flavor of the sweet and slightly charred tomatoes and the creamy ricotta made my mouth water. Even my picky kids ate them which was great.
Tomato and Ricotta Toast Ingredients
- 1 cup red and yellow sweet cherry tomatoes
- Wheat ciabatta loaf
- 1/2 cup ricotta cheese
- Italian thyme, salt, pepper for taste
- Olive oil for brushing
Directions:
- Slice the ciabatta loaf into 1/2 inch slices
- Brush bread with olive oil and broil for 3 minutes or until toasted; remove from oven
- Brush tomatoes with olive oil and broil them for 3-5 minutes or until the burst and slightly charred
- Spread ricotta over the toasts
- Add tomatoes, and sprinkle with herbs

Tomato and Ricotta Toast
Equipment
- Oven
- Oven Sheet
Ingredients
- 1 cup cherry tomatoes
- 1 loaf Wheat Ciabotta Loaf or your favorite bread
- 1/2 cup ricotta cheese
- 1 pinch thyme
- 1 pinch salt and pepper
- 1 tbsp olive oil
Instructions
- Set Oven to Broil
- Slice the bread loaf into 1/2" – 3/4" thick slices
- Brush olive oil onto the sliced surfaces of the bread.
- Place the bread into the oven and broil for 3 minutes or until toasted.
- Remove the toasted bread from the oven.
- Brush the tomatoes with olive oil
- Place the tomatoes on an oven sheet and broil for 3-5 minutes until they burst and become slightly charred. Remove from oven.
- Spread the ricotta cheese onto the toast.
- Place the charred tomatoes on top of the ricotta cheese and enjoy!
