Me Time & A Burst-Tomato Toasts Recipe

Winter has officially reared it’s sorta pretty, yet annoying self this past weekend. The end result? I was officially house bound and sort of stir crazy this past weekend. I hate being stuck inside the house due to severe weather, but it usually means “me time“. When you are a mom of three taking time for yourself is almost an unheard of phenomenon.
But, it can happen!
In order to get in at least 30 minutes of total uninterrupted bliss, I carefully set my kids up with some crafting supplies, their tablets and I quietly crept upstairs. I shut my door carefully, and retreated into my room with my PEOPLE® Magazine and Real Simple® Magazine that I picked up from Shaw’s to prepare for the storm.
Yes, something as simple as reading these two current magazines brought me a sense of unwinding relaxation that quickly rejuvenated me, and refreshed my creative juices. I love to escape into the seemingly fantasy world of celebs from time to time so PEOPLE® Magazine is perfect for that. To get inspired with new recipes, crafts, and life, Real Simple® Magazine is my favorite choice. Something about these magazines made me crave the bright colors of spring…wishful thinking!
Since you all know I love food, I am always scoping out new inspiration so the Burst-Tomato Toasts Recipe in the February 2016 issue of Real Simple® Magazine captured my attention. I decided to retreat to the kitchen because I had all the supplies on hand to make this tasty quick bite. You can find this recipe on page 161 and adapt it with various tomatoes, and spices like I did.
Being in the kitchen is how I usually unwind during the week because it is the room in my home that I feel most relaxed in. I keep my kitchen clean, and neat which makes cooking relaxing. These Burst-Tomato Toasts took me about 10 minutes to construct and they were so delicious with some lime infused ice water. The flavor of the sweet and slightly charred tomatoes and the creamy ricotta made my mouth water. Even my picky kids ate them which was great.
Here is how I recreated these Burst-Tomato Toasts from Real Simple® Magazine (page 161 February 2016 edition):
- 1 cup red and yellow sweet cherry tomatoes
- Wheat ciabatta loaf
- 1/2 cup ricotta cheese
- Italian thyme, salt, pepper for taste
- Olive oil for brushing
Slice the ciabatta loaf into 1/2 inch slices
Brush bread with olive oil and broil for 3 minutes or until toasted; remove from oven
Brush tomatoes with olive oil and broil them for 3-5 minutes or until the burst and slightly charred
Spread ricotta over the toasts
Add tomatoes, and sprinkle with herbs
Enjoy with a refreshing beverage.
