Tater tot casseroles are some of my favorite comfort casseroles to make when the kids go back to school. We love them so much because they are easy to make and the flavor combos are endless.
Lately, we are on a chicken kick—so I thought it would be tasty to create a chicken tater tot casserole. However, instead of using conventional fully potato-based tater tots, I used the all new McCain© Potato, Broccoli, and Cheddar Veggie Taters™.

What are Veggie Taters™?
Veggie Taters™ are potato based with veggies and cheese to enhance their flavor. They have no artificial flavors and are made with real broccoli, and cheese. They bake up super easy in the oven and are ready in minutes!

Ingredients for Chicken Veggie Tater Tot Casserole
- 2 boxes of Potato, Broccoli, and Cheddar Veggie Taters™
- 1 1/2 lbs of shredded, cooked, chicken
- 1 can cream of chicken soup
- 1 cup shredded cheese blend
- 3/4 cup sour cream
- 1/2 pack ranch dressing mix
- 1/2 cup fresh grated yellow cheddar
How to Make Chicken Veggie Tater Tot Casserole
I love this easy casserole using cream of chicken soup and precooked chicken. It really makes the meal so easy. The hardest part is precooking the chicken, but you could even use any kind of leftover chicken you prefer as long as it is 1 1/2 lbs. worth.
The Veggie Taters™ can be cooked according to the box instructions but once they are done, you can lower the oven temp to 350 degrees F.
To mix the casserole, add the chicken, 1 can of soup (double the recipe if you are making a larger casserole), sour cream, ranch packet, and 1 cup of cheese into a bowl.
Once the Veggie Taters™ are done, line half on the bottom of the pan. Add all the chicken mixture to the center, and then line the rest of the tots on top. Add grated cheddar and bake for 20 minutes at 350.
This casserole is rich and hearty and the kids loved it! Since it is so rich, a side salad makes a great companion if you want an additional vegetable.
Veggie Taters™ were a fun and tasty addition to this chicken tater tot casserole, but they are also so yummy alone!
They make an ideal snack for after school or before game time! You don’t even need ketchup because the flavors are so good!
Chicken Veggie Tot Casserole
Ingredients
- 24 ounces Potato, Broccoli, and Cheddar Veggie Taters™
- 1 1/2 lbs cooked chicken meat
- 10.5 oz cream of chicken soup
- 1 cup shredded cheese blend
- 3/4 cup sour cream
- 1 1/2 tbsp dry ranch packet
- 1/2 cup yellow cheddar freshly grated
Instructions
- Cook both boxes of Veggie Taters™ according to the package instructions.
- As they are cooking, add shredded chicken, soup, sour cream, ranch, and 1 cup of mixed cheese to a large bowl.
- Mix thoroughly.
- Once Veggie Taters™ are done, reduce oven temp to 350 degrees f.
- Line half the Veggie Taters™ on the bottom of the casserole dish.
- Add chicken mixture and spread.
- Top mixture with remaining Veggie Taters™ and grated cheese.
- Bake for 20 minutes, and serve warm.
