Cilantro Lime Shrimp Salad-So Fresh and Delicious!
Can you believe that the Lenten season is right around the corner? That means that many of you like my mom, will be looking for seafood dishes that are tasty, and non-meat based. Even if you are not celebrating Lent, you can still enjoy this totally delicious, and fresh Cilantro Lime Shrimp Salad. It has such delicious flavors making it a wonderful, clean eating dinner time meal.
Ever since I was a kid, I have always had a thing for shrimp. Actually, I have always loved most seafood, but shrimp always stuck out as my favorite. I love that it is easy to cook, convenient, and versatile. It is one of them foods that you can make so many ways. Typically, I like to make my Portuguese Shrimp Mozambique, but that is certainly not a lighter fare sort of dish. If you are looking for a lower calorie meal, then this Cilantro Lime Shrimp Salad is a much better choice.
Want to make this VERY quick and easy shrimp dish for your family? Here is what you will need:
- 1 1/2 lbs of peeled, de-veined, medium shrimp
- 2 cobs of sweet corn; shucked
- 1 lime
- 1 tablespoon of hot sauce
- 1 can of black beans
- 1 large beef steak tomato chopped
- 1 large cucumber diced
- 6-7 sprigs of cilantro
- 1/2 red onion diced fine
- 2 tablespoons balsamic vinegar
- 1/3 cup + 2 tablespoons extra virgin olive oil
- salt, pepper to taste
Add corn, drained black beans, 2 tablespoons cilantro (or more), tomato, cucumber, red onion to a large glass bowl
Add spices, 1/3 cup of olive oil, and vinegar; mix thoroughly and refrigerate.
In a large skillet, heat oil
Add shrimp, hot sauce 1 tablespoon of cilantro and the juice of half a lime to the pan. Cook for about 3-5 minutes or until shrimp turns bright orange.
Once shrimp is cooled, add it to the salad, and garnish with remaining lime and cilantro
Allow Cilantro Lime Shrimp Salad to meld and marinate in the fridge for at least 2 hours, and then enjoy!

I bet that the cilantro and lime give this a really nice flavor. I’ll have to try this for my family since we love anything cilantro lime, plus this is so well balanced with carbs, veggies, and protein.
