Cottage cheese happens to be one of my all time favorite nutrtious and quick snack or lunch additions. It is so versatile and can be prepared in sweet or savory dishes, snacks, and even desserts. I prefer quality varieties from brands like Friendship Dairies™ because they are much creamier, and thicker versus the watery, larger curd store brands. My husband, on the other hand, is not a fan and gets grossed out by it.
So, I made it my mission to try to give him a change of heart, or taste buds in this case. We all know how little kids can be picky with certain nutritious foods. Through experience, I think even 32-year-old men can still hold on to food aversions based on past unpleasant experiences.
Jared, my husband really had a bad experience one summer with some store brand cottage cheese he added to a salad. He claims the cottage cheese was watery, bland, and the curds were too large for him. Based on appearance and taste (or lack thereof), he shunned cottage cheese for years.
Being someone who loves cottage cheese I needed to change that so I made it my mission to get him to enjoy a recipe that contained cottage cheese. Despite it being pureed into a delicious dip I think I succeeded, but you can watch the below video to see for yourself. He knew I was recording but didn’t know my exact sneaky motive.
In the past, I have made energy bowls, and parfaits using Friendship Dairies™ Cottage Cheese which I conveniently purchase at Stop & Shop. This time, I wanted to hide the small and creamy curds. I personally love cottage cheese salad so I decided to puree it into a Protein-Packed Cottage Cheese Veggie Dip.
This cottage cheese veggie dip was so refreshing, light, creamy and void of extra fat vs. traditional sour cream based dips. The flavors of the various veggies and added dressing gave it the perfect amount of zest. Paired with some tortilla chips or veggies sticks and you have yourself one tasty dip.
Want to make this Protein-Packed Cottage Cheese Veggie Dip? Here is what you will need:
- 1 package of Friendship Dairies™ Cottage Cheese
- 1/4 cup of green bell pepper
- 1/4 cup of red bell pepper
- 1/4 cubanelle pepper
- 1 carrot
- 1/2 cup cucumber
- 1/3 cup Italian or oil based dressing
- 1 tablespoon chives
Directions:
Chop your veggies into bite-sized pieces, and add them to a medium-sized bowl
Add in your Friendship Dairies™ Cottage Cheese
Add in your dressing
Mix thoroughly.
Add mixture to a blender, and blend until creamy
Serve chilled with your favorite dipping medium
This Protein-Packed Cottage Cheese Veggie Dip is tasty and guess what? Even Jared loved it and wondered what made it so creamy. He was pleasantly surprised it was cottage cheese, and I even got him to have a change of heart.
