The holiday season is in full swing. Are you feeling the rush? This year, I am trying my hardest to stay ahead of the game. I have my holiday cards done, my shopping lists are made, and I might just have some menu items planned. I know for dessert, I will be making these Creamy Dark Chocolate Coconut Truffles.
Truffles are a holiday tradition for us. Every year it is my duty to bring chocolate truffles to my mom’s Christmas Eve party. Typically, I usually make cookie ball truffles, but wanted something different this year. Then it hit me, why not make some creamy coconut truffles?
I have this awesome macaroon cup recipe my aunt passed down that everyone loves. These truffle centers are actually very similar to that recipe, but instead of being baked in a filo dough shell, they get enveloped in dark chocolate.
Since we all love chocolate, I headed to Shaw’s to pick up some ingredients for a test run.
Shaw’s Supermarket is my favorite grocery store because they have a vast variety of organic foods. I love their baking aisle which features the very affordable O Organics® line of foods. So now that you know why I love shopping at Shaw’s let’s get back to this tasty holiday recipe. A few things I wanted to share about these truffles are that this recipe makes 15 truffles. You can easily double or triple this recipe though for larger crowds.
These truffles keep well for up to a week in a storage container in the refrigerator. However, you can also freeze them!! They are soo stinking good semi-frozen.

Creamy Dark Chocolate Coconut Truffles
Ingredients
- 3 cups Organic unsweetened coconut shreds Reserve an extra tablespoon of flakes for decorating truffles*
- 1 teaspoon pure vanilla extract
- 1 cup sweetened condensed milk
- 1/2 cup powdered sugar
- 20 ounces dark chocolate morsels
- 1/2 tablespoon coconut oil For a creamier melting chocolate *optional
Instructions
- Line 2 medium-sized baking sheets with was or parchment paper In a medium sized bowl mix the coconut, sugar, extract, and sweetened condensed milk.
- Using your clean, slightly wet hands, form coconut mixture into 1 1/2 inch balls. Place them each on one of the baking sheets. Once they are all formed, put the baking sheet into the freezer for 20 mins.
- Over a double boiler, melt dark chocolate chips with *optional* coconut oil for a creamy finish. *you do not need to do this step-just personal preference.
- Once creamy, remove from heat and then dip each frozen ball into it. Place each truffle on the other parchment-lined baking sheet.
- Dip each chocolate, and then top truffles with coconut. Place them in the freezer to harden for 5 mins.
- Store hardened truffles in an airtight container in the fridge until enjoying.
