Death By Chocolate Ice Cream Cookie Cake

I don’t know about you, but around here, summer is not complete without some ice cream cake.

Let me tell you, that is one delicious dream come true kind of cake. I am so happy that they perfected the “cookiewich” which is one of my favorite ways to enjoy an ice-cold summer snack.
The Carvel Ice Cream Cookie Cake is two jumbo-sized cookies sandwiched together between delicious vanilla ice cream and coated with those famous chocolate crumbs.
The Carvel Ice Cream Cookie Cake is so delicious by itself, but you all know I like to take things to the next level!
I recently personalized my Cookie Cake to have more chocolate…lot’s more chocolate! In fact, I call this tasty specimen the Death By Chocolate Ice Cream Cookie Cake.
Looks amazing, doesn’t it? You know you want a slice!
Here is how I made my Death By Chocolate Ice Cream Cookie Cake:
- 1 Carvel Ice Cream Cookie Cake
- 16 ounces of heavy whipping cream
- 1 teaspoon of pure raw cacao
- 1/3 cup of confectionery sugar
- maraschino cherries
- 1-2 fudge brownies
- Hot fudge
- Chocolate candy pieces (broken candy bars etc.)
Directions:
In a large bowl, add the cream, cacao, and sugar- whip on high until firm peaks form in the cream
Once the cocoa cream is ready, add it to a large piping bag.
Pipe cream puff on the outer edge of the cake. Leave a small 4-inch circle in the middle bare
Pour chocolate candies into the bare circle to fill that space.
Add some extra chocolate chunks around the piped cream
Top cake with fudge brownie chunks
Swizzle hot fudge over the top of the cake
Add 6-8 maraschino cherries.
My cake was able to just fit back into the box covered. I froze it until serving at our BBQ celebration.
You can add it to a cake container and use that if it gets too high, but be sure to place it back into a freezer for at least 30 mins to firm or longer.
