Easy Apple Cinnamon Muffins Recipe: Perfect Recipe for Freezer Muffins!
Apple is one of the all star flavor of autumn. Apple pies, cakes, teas, muffins and even candles can be found on my counter at any given time. Sometimes I feel like I may belong in the 50’s era with all the baking I do, but that’s ok! My family always has a nice, warm treat to sink their teeth into. I laugh when my kids come home from school and ask what I baked for them. Last week it was some fresh out of the oven (or freezer) Easy Apple Cinnamon Muffins.
I made soo many muffins with all the fresh apples that we picked. That is when I decided to put the extras in freezer bags and pop them in my chest freezer. That way I could “pretend” like I was slaving over the oven on days where I am just in a rare, non-baking type of mood–hey, it does happen sometimes! Despite what my kids tend to think, I am not a robot.
So on to these delish apple muffins. I love them..that is all.
I am not sure if it is a tender little chunks of apple in them, or the spicy flavor, but whatever it is I like it!
If you are in the “Betty Crocker mood” ==as my dad would say, here is what you’ll need to make some Easy Apple Cinnamon Muffins:
Servings =12 muffins..I double this recipe
- 1 1/2 cups of unbleached flour
- 3/4 cups of white sugar
- 1 1/2 teaspoons of baking powder
- 1 teaspoon ground cinnamon
- 1/2 cup whole milk
- 1/3 cup unsalted butter; melted
- 1 egg slightly beaten
- 1 large apple peeled, cored, and diced up
Pre-heat your oven to 375.
Lightly grease your muffin tins
Mix dry ingredients in a large bowl. Add remaining ingredients, and stir until thoroughly mixed.
Spoon batter into greased tins.
Bake for 18-22 or until muffins are lightly browned
Cool, and enjoy these delicious apple cinnamon muffins that are perfect frozen!
