Cheesy Fish Quesadillas with Salsa & Cilantro Lime Sauce

Cheese makes everything better–am I right? It is really hard to even think of a dinner-time meal that is not made yummier by adding some kind of delicious cheese to it.
I even love my Crunchy Breaded Fish Sticks with cheese, and always have! Back when I was younger Gorton’s Fish Sticks were a weekend specialty. My mom would always bake some up with some fries for dinner. We’d eat out fish sticks with tartar sauce, or on hamburger buns with yellow American Cheese.
Those were the days!
Now, twenty-something odd years later, and Gorton’s Seafood has really expanded into more than just fish sticks and patties.
But today, I am taking things back and sharing my continued love for Gorton’s Fish Sticks–specifically in these Cheesy Fish Quesadillas with Salsa Cilantro Lime Sauce.

Let me tell you, they are amazing!! Pair them with American cheese, cheddar, provolone, mozzarella–they are just so delish with pretty much any common variety.
Since cheese + quesadillas are some of my fave foods I am excited to share this recipe.
These fish quesadillas are loaded with fresh flavor thanks to the cilantro, garden-fresh tomato, and onion. I made a quick mild salsa with lime juice and an even quicker cilantro-lime sauce.
I once had cilantro lime dressing or sauce at a fancy fusion restaurant and was instantly hooked. Now, I make a toned down version at home with just 3 ingredients–sour cream (full fat), lime juice, and cilantro. You pretty much just blend it up until creamy and enjoy the heck out of it!
It goes together perfectly with the crunchy taste of the Gorton’s Fish Sticks, melted cheddar, salsa, and toasted flour tortillas.
These Cheesy Fish Quesadillas with Salsa Cilantro Lime Sauce require little cooking efforts and make an ideal summer or back to school meal. You can totally prep the salsa, and cilantro lime sauce earlier in the day or the night before to make dinnertime a breeze!
I love how the cheese just melted right out of these perfectly.
They are a tasty work of art if I do say so myself.
Plus, you can opt to not add salsa or this sauce and go for a just cheese and tartar sauce combo–the options are endless and depend on what you or your family enjoys!

Cheesy Fish Quesadilla with Salsa Cilantro Lime Sauce
Ingredients
- 8 small flour tortillas
- 16 whole Gorton's Crunchy Fish Sticks baked according to box instructions
- 8 slices cheddar cheese
Salsa
- 1 cup chopped tomato drained
- 1 tablespoon diced red onion
- 1 tablespoon cilantro chopped
- 1/2 tablepoon lime juice
- salt & pepper to taste
Cilantro Lime Sauce
- 2 tablespoons cilantro
- 1/2 cup sour cream
- 1 teaspoon lime juice
Instructions
- Bake fish according to package instructions. Prepare salsa and set aside. Prepare cilantro lime sauce and set aside. Once fish is done, line 4 flour tortillas. Add 4 fish sticks to the tortillas and line with 1 1/2 slices of cheddar. Top with salsa and cilantro lime and bake for 6 minutes. When done cut into 4 triangles and serve with additional cilantro lime sauce and salsa. Enjoy!

We’re big fans of quesadillas around here, they can be so easy to make. Hubby enjoys fish and we often have it in the freezer for him so this would work well for him for a quick dinner.
