Garlic Lime Shrimp Recipe
Garlic Lime Shrimp is an easy, quick, flavorful and protein-packed meal that can be prepared ahead of time and enjoyed with rice, on a salad, or as a snack.
Did you over indulge during the holiday season is colorful snacks, treats, and fatty meals? I bet most of us can raise our hands to that one! For me, January has always been the month in which I made some of the most naturally colorful, and nutritious meals. I guess you can say that I sorta make up for the lack of color outdoors with my meal plans.
Is it spring yet? Sighhh
After the first snow, I am all set with winter and the below zero wind chill. Despite going out every single day, I feel so trapped and spend most of my time in the kitchen. With eating more nutrient packed meals in mind, today I prepared this Garlic Lime Shrimp Recipe for dinner, and boy is it great!
Want to make a batch for your family? Keep in mind I used almost 2 lbs of shrimp and it cooked down to maybe a pound and a half. You can double or triple this recipe if you family is larger, but always use sea salt, and not table salt which will make this meal super salty and gross!
Ingredients for garlic lime shrimp:
- 2 tablespoons of unsalted butter
- 2 lbs of peeled shrimp
- 1 lime
- 1/4 tsp paprika, sea salt, pepper, onion powder, garlic powder, and a ginger
- 3 large mashed cloves of garlic -I LOVE garlic so this was important to have a lot
Peel, rinse, and pat dry your shrimp
In a skillet, heat butter, and then add mashed garlic to saute until slightly golden brown
In a bowl, add dry spices to shrimp. With the exception of the salt you can add more or less of each.
Add shrimp to the skillet and cook for 3-5 minutes or until shrimp is slightly seared a golden brown and liquid is mostly gone.
Squeeze the juice of one half lime over the shrimp 1 minute before it is done cooking. You can add more juice when serving as I will for more zesty flavor.
Serve over a bed of whole grain brown rice, or enjoy alone.
I love shrimp because it is a protein-packed food that can be prepared so many ways. My kids especially love it to snack on which I am totally fine with because it is a wholesome food.
