For me, January has always been the month in which I made some of the most naturally colorful, and nutritious meals. I guess you can say that I sorta make up for the lack of color outdoors with my meal plans.

After the first snow, I am all set with winter and the below zero wind chill. Despite going out every single day, I feel so trapped and spend most of my time in the kitchen. With eating more nutrient packed meals in mind, today I prepared this Garlic Lime Shrimp for dinner, and boy is it great!
Want to make a batch for your family? Keep in mind I used almost 2 lbs of shrimp and it cooked down to maybe a pound and a half. You can double or triple this recipe if you family is larger.
Ingredients
- unsalted butter
- peeled shrimp
- fresh lime
- paprika, pepper, onion powder, garlic powder
- fresh ginger
- fresh garlic
Make it
Peel, de-vein, rinse, and pat dry your shrimp.
In a skillet, heat butter, and then add mashed garlic, and ginger to saute until slightly golden brown and fragrant.
In a bowl, add dry spices to shrimp and toss.
Add shrimp to the skillet and cook for 3-5 minutes or until shrimp is slightly seared a golden brown and liquid is mostly gone.
Squeeze the juice of one half lime over the shrimp 1 minute before it is done cooking. You can add more juice when serving as I will for more zesty flavor.
Serve over a bed of rice (or your favorite side) with a lime wedge and fresh cilantro.
I love shrimp because it is a protein-packed food that can be prepared so many ways. My kids especially love it to snack on which I am totally fine with because it is a wholesome food.

Ingredients
- 2 lbs raw shrimp *any size, de-veined, and peeled
- 2 tbsps. unsalted butter
- 2 tbsps. lime juice
- 1/4 tsp. paprika
- 1/4 tsp. sea salt
- 1/4 tsp. onion powder
- 1/2 tsp. ginger freshly grated
- 4 cloves fresh garlic mashed
- 1 tsp cilantro
- 1 whole lime quartered for serving. *optional
Instructions

- In a bowl, add dry spices to shrimp and toss.
- Add shrimp to the skillet and cook for 3-5 minutes or until shrimp is slightly seared a golden brown and liquid is mostly gone.
- Serve shrimp with fresh cilantro and lime wedge over rice.
