Grilled Chicken and Grapes Salad
With this month’s food challenge being recipes containing fruit, I have found myself looking out of my normal recipe box. Until my recent Strawberry and Arugula Balsamic Chef Salad recipe, I have never paired sweet and savory together. I am pretty sure BBQ sauce or pineapple on ham was as far as I pushed my limit.
Since I had some grilled chicken in my freezer I figured I’d make a chicken salad with it. I mass batch grilled around 8 lbs of chicken last month after scoring a great sale so I have been trying to use it in creative ways. I used to work at a deli that made grilled chicken and grapes salad, but it never appealed to me…I actually used to get grossed out. I couldn’t get past the whole fruit, meat, and mayo thing.
I must admit I am so happy that I jumped feet first into this grilled chicken and grapes salad dish because it is soo good I could eat it every day! The char-grilled chicken, some simple salt and pepper, mayo, celery, and diced red grapes were all I needed to make this out of this world delicious meal.
Grilled Chicken Salad Ingredients:
- 2 lbs grilled chicken breast shredded
- 3/4 chopped celery
- 1 cup halved red grapes
- 1/2 cup mayonnaise
- salt, and pepper to taste
Directions:
Grill your chicken on a charcoal grill for the best flavor. When it is cooled, shred it, and place it in a large mixing bowl. Chop your grapes and celery. Add your chopped fruit, and veggies, mayo, and spice; mix well. Serve chilled on a bed of fresh romaine, or salad–your family is sure to love grilled chicken salad with grapes!!
