Kale Caprese Salad with Tuna
By now, I am sure most of you all have children that have returned to school. My girls head back in exactly one week and I cannot say I am not frazzled. Just when I thought I was prepared with supplies, meal ideas, and clothing; mentally I am just not there yet. Giving up the beautiful, carefree days of summer is kind of sad. The lack of routine is just so relaxing and will be mucho missed!
In our household, one of the most hectic times of the day is around 3 pm once my girls get home from school. Right around 3pm it is like a mini tornado rips through my home once they open the door and spill their homework, papers, and backpacks all over. For me, it means that work is over and I must focus on helping with homework and getting dinner prepared.
Around here, I often turn to salads as meals and jazz them up with proteins like Bumble Bee® Solid White Albacore Tuna. How to make Kale Caprese Salad with Tuna:
- 4 cups of washed and chopped kale
- 5 radishes thinly sliced
- 1 cup of washed cherry tomatoes
- 8 ounces of chopped fresh mozzarella
- 8 basil leaves
- 1/3 cup chopped red onion
- 2 cans of Bumble Bee® Solid White Albacore Tuna
Chop and prepare all of your veggies and cheese
Add to a large salad bowl
Before eating add the Bumble Bee® Solid White Albacore Tuna
Drizzled with dressing and enjoy!
I added in some thinly sliced radishes for a spicy element, and some red onion plus the vinaigrette for a scrumptious and easy to make back to school dinner. My kids actually hate sandwich bread so they appreciate salads like this much more as a weekday meal.

My husband loves Bumble Bee tuna, but often gets bored with having it in sandwiches. I think I might make this for him this week – I think he’d appreciate the change of pace and the colors in this salad really make it look healthy and light!
