Last July I started on the keto diet and lost 17 lbs in one month. But, then just like that I fell off the bandwagon and decided to go back to traditional carbs. I pretty much gained 10 lbs back fast!
Since my children and husband are not following this plan, I still will be making and featuring delicious classic comfort foods mixed with some healthy recipes. I mean, let’s face we all love carbs in moderation. But, I need to shed this weight, and for me lowering my carb intake works.
My Keto Story
Last month at my annual physical, while my vitals, and blood work were just fine my doctor was on me about my weight. She even said “You need to stop eating carbs” in the most blunt way ever. So, with more knowledge and experience under my belt I decided to jump back on.
For me, keto is a plan that will help me get to a weight I can easily manage. I do not plan on living on this plan forever because that is not sustainable for me. My first goal is to lose a solid 15 lbs and so far I have lost 7 –yay!
This time I hope to be able to achieve my goals. So far, so good! I am also intermittent fasting. My eating window is between 12:30-8:30 but I really only eat two meals per day.
Snacking on Keto
I admit, I am such a snacker. I used to always “have” to have a snack after dinner. But, these days I reserve it for special days. Since Fridays are my date nights with my husband I figured what better way to celebrate than with a keto whipped cream dessert. Each dessert features a dusting of sugar-free chocolate and strawberries- 2 large ones per parfait to be exact!
Best Keto Whipped Cream Sweetener
After some trial and error I found that adding one packet of Stevia to one cup of heavy cream works just fine! I don’t like it to be overly sweet since I depend on the sweetness of the strawberries so this works out perfectly.
Do you need to add Vanilla Extract to Keto Whipped Cream
Since I have made keto whipped cream with both vanilla extract and without, I can say that it is totally optional and 100% not necessary for a delish dessert.
How many net carbs in 4 strawberries?
While I am not an expert, going by nutritional values on the average strawberry size I have tallied these to be worth 2 net carbs. That is not bad at all! In fact, aside from avocados and blueberries, strawberries are one of the most keto-friendly fruits in moderation.
Best Keto Chocolate (in my opinion)
I have tried a few no-sugar added chocolate bars that I have slowly enjoyed, and I have to say that Simply Lite Low Carb Dark Chocolate are my fave! I love pretty much all varieties and indulge in just one square at a time since that is the serving size. But, be warned–like any sugar substitute too much can kick you out of keto! Go slow, and make sure to stay in your macros.
For this dessert I only use half of one square between both desserts to create a light dusting. It really hits the spot. You can find this low-carb chocolate online on Amazon.

Keto Whipped Cream Strawberry Dessert
Ingredients
- 1 cup Heavy whipping cream
- 4 strawberries You can cut them however you choose
- 1/2 tsp. sugar-free chocolate dusting
- 1 stevia packet
Instructions
- Add heavy whipping cream to a cold bowl with stevia and whip on high for about 3 minutes or until firm peaks form.
- Cut berries how you please and add them to a glass. You can either decorate the glass with them, chop them, or simply sprinkle them on top of the cream.
- Put whipped cream in a piping bag.
- Pipe into two dessert glasses.
- Dust with chocolate and serve.
