This year, my daughter’s 8th birthday is going to be extra special because it is also the day the Nickelodeon Kid’s Choice Awards air. My kids love Nickelodeon, and spend a lot of their free time enjoying the shows and cartons. They are excited for the awards show because it truly is a fun event that is very entertaining for all ages. I told them, this year we would have our own little party and serve foods like my Kid-Approved Bacon Mac & Cheese Cups and Capri Sun Roarin’ Waters lightly fruit-flavored water beverage.
Did you know that Capri Sun Roarin’ Waters is the 2015 official drink sponsor of the Nickelodeon Kid’s Choice Awards? I was so excited to hear this news because my kids love this beverage.
We usually pick up our Capri Sun Roarin’ Waters beverages at Walmart. We love the 30 count packs because those last us all week. They are perfect for tucking into my girl’s lunchboxes, and are low calorie (30 calories per pouch) with no added colors, or flavors.
I remember when I was younger, my mom would always let my sister and I stay up later than normal to watch the Nickelodeon Kid’s Choice Awards. It was always such a blast to see so many of my favorite stars, and artists. My mom would set out yummy snacks, and drinks for us just like what I will be now doing for my two girls.
This year, I decided I would put a spin on my kid’s favorite meal-macaroni and cheese! Like most kids, they love this meal so much! That is why I decided to make some Bacon Mac & Cheese Cups to serve with their Capri Sun Roarin’ Waters beverages during the awards show.
Here is how to make Kid Approved Bacon Mac & Cheese Cups-*Makes 12 heart cups*
- 12 ounces of whole wheat elbow macaroni cooked al dente
- 1 cup of white shredded cheddar
- 1 cup of yellow shredded cheddar
- 1 cup of warm milk
- 2 tablespoons of butter + 1 melted tablespoon for buttering muffin tins
- 2 tablespoons of flour
- 1/2 teaspoon each of of salt, pepper, onion powder, garlic powder
- 10 crushed butter style crackers
- 4 sliced of crushed crispy bacon
Cook pasta until al dente
Pre-heat oven to 350 degress
Grease a 12 count standard sized muffin tin with melted butter
In a medium saucepan, melt butter over medium heat.
Once butter is melted whisk in the flour, warm milk and spices
Add one cup of cheese at a time, and whisk constantly; sauce will be thick and creamy
Drain pasta and place it back in the pan.
Pour cheese mixture into the pan, and mix thoroughly.
Crumble crispy bacon and mix it within the pasta mixture.
Using an ice cream scooper, fill each muffin tin with macaroni and cheese
Top with crushed butter crackers, and extra bacon *if desired
Bake for 15 minutes at 350
Allow cups to cool for at least 30 minutes before gently removing them from the pan. I used a plastic knife to gently remove them. The butter really made this a breeze!
My kids LOVED these bacon mac & cheese cups because they were extra cheesy and had just the right amount of flavorful bacon. Paired with a pouch of Capri Sun Roarin’ Waters, and my kids had the perfect meal! I cannot wait to make these again for the Nickelodeon Kid’s Choice Awards which airs on March 28th at 8 pm EST.
