Paleo Diet Coconut Banana Almond Flour Muffins
Are you trying to cut down on sugar, and eat a lower carb diet? If so you have come to the right place for a bunch of great almond flour recipes! Since I rid my pantry of white sugar, and flour I have been baking quick, easy, healthy recipes. Our cabinets are now loaded with coconut, almond, and rice flours. We also have tons of clover honey, and unsweetened coconut flakes.
Today’s recipe is for Paleo Diet friendly coconut banana almond flour muffins. I am not necessarily completely following the Paleo diet, but I have been revamping my sweets, and baking to adapt to this healthy diet. I personally love almond flour, but will most likely eventually switch to coconut flour because it seems to be the overall healthiest of the three.
These paleo diet coconut banana almond flour muffins are so quick, and easy to make! It took me about 15 minutes total to prep, and make these muffins. I have to thank my Kitchen Aid for doing most of the work! If you don’t own one, they are a wonderful investment.
Paleo Diet Coconut Banana Almond Flour Muffins ingredients:
- 2 cups of almond flour. I am partial to the Honeyville Grain brand, and find it so tasty, and fresh!
- 1/4 Cup of unsweetened coconut flakes
- 3/4 tsp of baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt {finely ground}
- 2 ripe mashed bananas
- 2 eggs
- 1/4 cup honey
- 1 tablespoon vanilla extract
- 3 tablespoons of coconut oil
Directions:
Pre-heat your oven to 350 degrees.
Mash your ripe bananas
Line your muffins tins with baking wrappers. I like my muffins on the larger side so this recipe yielded 15 muffins for me.
In a larger mixing bowl, combine all your dry ingredients.
In a separate mixing bowl (I used my Kitchen Aid Mixer bowl, combine all your wet ingredients.
Add you dry ingredients slowly into the wet mixture
Mix well, and until thoroughly combined.
Using an ice cream scoop, add your mixture to your cups
Bake in a pre-heated oven for 20 minutes. You may want to start checking them with a toothpick at 18 minutes.
The best part about these Paleo Diet Coconut Banana Almond Flour Muffins is that they also freeze well for consumption at a later date. You may want to consider that for a quick breakfast. Just be sure to remove the baking paper. I hope you enjoy our recipe!
