Penne With Spinach & Chicken Sausage
Ingredients
- 1 package Al Fresco Chicken Sausage sliced into 1/4 inch thick slices
- 2 tablespoons Extra Virgin Olive Oil
- 2 whole cloves of garlic minced
- 2 Diced Roma Tomatoes
- 1 medium sweet onion diced
- 1 box of whole wheat penne boiled until al dente
- 1 jar of your favorite red pasta sauce
- 2 cups washed baby spinach
Instructions
- Boil pasta until al dente In a large skillet, sautee garlic, onion, and tomato Add in chicken sausage and cook until slightly browned. Add in spinach and cook for about 1 minute Add in drained pasta, and then full jar of sauce Mix and serve warm. *You can also top with cheese and an option*

How have I never heard of Chicken Sausage? Our family loves chicken and sausage. Combining the two would be like the perfect meal. I would probably try this recipe minus the spinach, as I don’t know anyone who will eat it (kids or adults). It looks so tasty and we are huge pasta eaters in our house!

I made this tonight as a last minute dish. I didn’t have any fresh spinach on hand but substituted frozen peas.. it was delicious! My mother in law was from Italy and used peas in many of her recipes. I will definitely be making this again!

This was really good! I added 19 oz of Italian sausage and more fresh tomatoes and spinach than what the recipe called for because I had more on hand. I cooked the Italian sausage as links and then cut the links up. Next time, I think I’ll remove the sausage from the casings and do more of a ground Italian sausage in the recipe. I used a vodka tomato sauce for my jarred tomato sauce. I would definitely make this again!!
