Ever since I was younger, I have always loved the St. Patrick’s Day holiday. March 17th was always about all things green. I would set out leprechaun traps with hopes I would capture a leprechaun.
Let’s just say, 20 something odd years later, and I still have not found my pot of gold at the end of the rainbow. But, I have made edible strides to getting my rainbow and gold fix on.
My kids and husband are part Irish and look forward to our annual St. Patrick’s Day corned beef meal and a sweet “themed” treat afterwards. This year, they made out with being able to enjoy this exact cake a month earlier, and will get another fun spin on a St. Patrick’s Day cake again when the time comes.
So, without further banter, I am going to share everything you need to create this cake for your friends and family. You will have them thinking you got some serious cake skills—or not..but hey, A for effort—right?
Easy St. Patrick’s Day Pot of Gold Rainbow Cake
Order a Plain Cake
To start your St. Patrick’s Day cake journey, you will need a white double layer round cake. The one shown is 7″ double layer with bettercreme frosting. Simply call your local bakery to place your order.
Make sure to tell them you want it plain with top and bottom trim, and no combed edges. Mine cost me $16.99 at Stop & Shop. You can choose from vanilla or chocolate.

St. Patrick’s Day Cake Toppers
I also used mini pots of gold from the dollar store as well as chocolate gold coins. You can find these locally for a great price. Some additional photo opp props like silly glasses, bow ties, and headbands can also be purchased in-store to make your festivities extra fun.
I also purchased Valentine’s Day sprinkles in-store. They were the perfect addition that complements the Sixlets. Cake toppers in various styles can be found online as well.
How to Make a Pot of Gold Cake
Start out by adding all your candy colors into little bowls to make it easy to pluck them. Lay out all your supplies within arms reach.
Uncover your cake, and figure out how you want to make your rainbow. Do you want a band going across, maybe a horizontal tapered band? Regardless, keep in mind the ROYGBIV rainbow colors to create that aesthetically pleasing color pattern.
Add chocolate coins around your cake to spread it out. I added them to the top trim for added effects.
Wash your mini pot and dry it carefully. Fill it with Gold Sixlets. You want to slightly tip it and have the gold spill.
Sprinkles added to the bare trim tie in the colors and give it an extra festive feel.
Once you are done decorating, be sure to seal the cake with the cover until it clicks.
This cake stores well in the fridge for up to one week. The candies do not bleed and will stay nicely adhered.

Ingredients
