Meals like this Rainbow Grilled Sriracha Chicken Salad are easy to prepare and are loaded with nature’s goodness.
Here is how you can recreate this Rainbow Grilled Sriracha Chicken Salad:
- 1 lb Chicken Tenders *marinated in 2 tablespoons lime juice, 1/3 cup of sriracha and 1/4 cup honey
- Red Cabbage
- Rainbow Peppers
- Avocado
- Romaine Lettuce
- Red onion
- Cucumber
- Cheese *optional
Sriracha Dressing:
*Adjust to servings sizes
- 3 tablespoons Mayonnaise
- 2 tablspoons Sriracha
- 1 teaspoon of Lime juice
- 1/4 teaspoon of Soy Sauce
Basically, this salad requires a lot of veggie chopping and a quick 10 minutes grilling for the chicken; all of which can be prepared ahead of time. I marinated our tenders for 8 hours and grilled them until clear juices ran free. You can also prepare the dressing earlier in the day to allow the flavors to meld. To prevent your avocado from browning, sprinkle with lime juice. If you love the citrusy tang of limes, you can also add additional lime wedges for flavoring your salad.

I love just about everything that Rachael Ray puts out there. It seems to be well thought out and full of nutrition. Of course I’d trust her with my dog’s food! It seems to be very well balanced and has great ingredients. Speaking of great ingredients though, that salad looks amazing! With the warmer weather on the way I’m in the mood for salad these days. :)
