Since Lasagna is one of those meals that I love, I knew that I wanted to create a “twist” that would entice my kids to want to eat them. The truth is, my kids are super picky and do not like how traditional lasagna can be messy.
How to Make
I LOVE how easy, and simple these Lasagna Roll-Up Cups are to make. They are not the cheapest meal, but are definitely something that should be considered from time to time!
Ingredients:
This recipe will make 12 cups.
- 1 pound of 80/20 ground beef
- 12 traditional boil lasagna noodles
- 8 ounces of mozzarella cheese
- Fresh basil, chopped
- salt & pepper to taste
- onion & garlic powder
- 16 ounces of ricotta cheese
- 16 ounces of cottage cheese
- 1 cup of pasta sauce
- 14.4 ounces of diced tomatoes
Preparation:
- Boil your noodles until they are al dente. Remove noodles and rinse them with cold water; drain.
- Preheat your oven to 350 degrees Fahrenheit.
- Pan fry the hamburger (add spices) and drain any excess grease; set aside. Add meat mixture into a large mixing bowl.
- Add the cottage cheese, and ricotta cheese to your meat mixture. Mix all the ingredients together-set aside
- Spray your muffin tins with non-stick spray.
- Cut 2 inches from each lasagna noodle. Form the lasagna noodles around the muffin tin
- Fill with the meat mixture.
- Add an even amount of pasta sauce to each roll up.
- Sprinkle each evenly with cheese.
- Place them in the oven for 20 mins at 350 degrees Fahrenheit.
- Sprinkle with freshly chopped basil before serving.
Pro Tips
You can use 90/10 meat mixture if you prefer a leaner meat. Additionally, turkey can also be used.
Add more flavor to your hamburger meat by adding in one small, diced onion while browning the meat.
You can mix up the cheeses if you prefer to use Parmesan or Italian Cheese blend.
All rolls to set in the pan after baking for at least 10-15 minutes to firm up. Use a spoon to scoop them out and support the bottoms.
How to Freeze
These can be frozen once fully cooled. Add them to a parchment lined baking sheet and freeze until solid (about 2 hours). Once frozen solid, add rolls to a freezer-safe bag or container. Add heating instructions and date for up to 3 months. To reheat, add rolls to a muffin tin and bake for 25 minutes or until thoroughly warmed.

- 1 cup marinara sauce *your favorite pasta sauce
- 8 ounces mozzarella cheese grated
- 1 tablespoon fresh basil chopped
