Chimichangas are one of my favorite Mexican dishes to eat at our local authentic eatery. I typically get shrimp or chicken chimichangas that are deep fried to perfection. They are served with fresh sides like spicy sauces, salsa, & sour cream.
You can serve chimichangas with sides like Mexican rice, salad, refried beans, and a side of fresh guacamole.
I love serving these Baked Beef Chimichangas topped with cheese, salsa, and a side of lettuce, tomato, and Cilantro Greek Yogurt. For this meal, I used Delta® Greek Yogurt which is now available in the U.S.!

Baked beef chimichangas
A few reasons why I loved this meal is that you can make these crispy in the oven without deep-frying them. It saves a few calories, and a lot of grease spatter, and still produces a yummy, toasty outside, and a cheesy, meaty, inside.
You could serve these with a carby side like Mexican rice, but I prefer a basic salad with some fresh guacamole. These are very filling so piling up on carbs might be an overload.
Making these is so simple! This recipe made 5 comfortably with 1 1/2 lbs. of lean ground beef. You can use taco seasoning to flavor the meat, but I prefer this spice blend for the best flavors.
Homemade taco spice
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp oregano
- 1/4 tsp chili powder
- 1/4 tsp smoked paprika
- 1/4 tsp salt
This gives any Mexican-inspired beef dish a nice taste without any of the spices being too overpowering or salty.
Cilantro lime sour cream
No Mexican main dish is complete without a side of sour cream. However, when I discovered how delicious Greek yogurt was as a sour cream substitute years ago, I made the switch. Delta® Greek Yogurt in the nonfat, plain variety is my latest favorite!
I love how thick and smooth it is! Paired with lime, and fresh cilantro–what a vibrant, and refreshing taste! Delta also makes a plain flavored yogurt that is 5% fat, which could also be used in this recipe.

Baked Beef Chimichangas
Equipment
- 12" Skillet
- baking sheet
Ingredients
- 1 1/2 lbs. ground beef
- 1 tbsp. Homemade Taco Seasoning (see recipe below- makes 2 tablespoons)
- 5 12" white tortilla wraps
- 1 cup cheddar cheese
- 1 cup refried beans
- 1/2 cup red onion diced
- 1 cup tomatoes diced
- 2 1/2 cups iceberg lettuce shredded
- 2 tbsps olive oil
Cilantro Lime Yogurt
- 1 cup Delta® Greek Yogurt plain, non-fat variety or plain, 5%
- 3 tbsps cilantro
- 2 tsps lime juice
Instructions
- In a large skillet, brown ground beef with taco seasoning. Drain any excess fat and set aside.
- Preheat oven to 400 degrees Fahrenheit.
- Lay out tortillas and add an even amount of refried beans to each.
- Add an even amount of seasoned beef to each.
- Sprinkle cheese on each.
- Add a little red onion (about a tablespoon each).
- Fold in one inch of each side of the tortilla, then roll upwards towards the bottom. Make sure the fillings stay in place.
- Place folded side down on parchment-lined baking sheet.
- Brush each with melted butter and bake at 400 degrees Fahrenheit for 25 minutes.Â
- Serve with Cilantro Greek Yogurt and a side of lettuce, tomato, and remaining red onion.
