Shrimp Scampi Flatbread

This time of year, many of you are likely abstaining from meat on Fridays for the Lenten season.
That is why I decided that a quick and tasty recipe like this Shrimp Scampi Flatbread would be perfect to share with you all. It is not only bursting at the seems with flavor but it will take you no more than 10 mins in the kitchen from start to finish.
We all love a quick and easy recipe, right? Plus, this flatbread recipe will not leave you feeling overly full. Made with Gorton’s Garlic Butter Shrimp Scampi it is super tasty and requires minimal prep.
Being that I do love the bold flavor of garlic and oil, I did add a little more flair for the health benefits. However, you really just need a box of Gortons’ Shrimp Scampi, some parsley, flatbread, and cheese blend.
I have enjoyed Gorton’s Seafood products since a child. I can still remember the coupon they use to put in the Fish Stick boxes back in the early 90’s. It was such a treat enjoying their iconic fish sticks, but, it is even more, cooler how they evolved. Today, Gorton’s makes tons of products that cater to all lifestyles. As a matter of fact, their Shrimp Scampi is even certified gluten free!

Here is what you will need to make this delicious Shrimp Scampi Flatbread:
Ingredients:
- 1 package of Gorton’s Garlic Butter Shrimp Scampi
- 2 large flatbread
- 3 small cloves of garlic
- 1 tablespoon of extra virgin olive oil
- 1/2 cup of whole milk mozzarella
- 1/2 cup of Parmesan Reggiano
- 2 tablespoons of chopped parsley
Directions:
Heat oven to 35o degrees
Brush your flatbread with olive oil and sprinkle with minced garlic- toast for 3 mins in the oven, remove
In a small skillet, prepare Gorton’s Shrimp Scampi according to the ingredients.
Remove from heat once it is done
Brush extra scampi sauce over flatbread
Chop shrimp into smaller pieces, and sprinkle onto flatbread
Sprinkle on even parts of cheese
Top with parsley- you can reserve a little for after baking if you’d like
Bake for 5 minutes or until cheese is fully melted
Slice and enjoy warm!
