Southern Style Pecan Pie

One of my favorite pastimes as a mom to three is baking up sweet treats for my family. It may sound funny to some, but I love spending time baking cookies, cakes, and pies for my kids. They also love to be my official little baking partners so it is truly a wonderful activity. It is such a wonderful thing to be able to turn basic pantry items into decadent sweet treats like Southern Style Pecan pie.
The first time I have ever enjoyed a slice of pecan pie was when my family and I were vacationing in Virginia. I decided to try a piece at a restaurant, and boy was it so darn good. The sweet crunch of that pie had me wanting to bake up another, and replicate the sticky, sweet taste.
And that is just what I did!
In anticipation of two new food shows on Ovation TV; Southern Uncovered, and The Da Vinci List: Chefs, I hit the pantry and rolled out the dough to make my very own Southern Style Pecan Pie. I am such a fan of Southern desserts and foods so I am really eager to watch these two new shows!
I am super excited for both shows to air on Ovation TV, but I cannot wait to watch Southern Uncovered! It airs on June 14th at 8/7c pm and is sure to be a hit! The new series will follow James Beard Award-winning food and travel writers Matt and Ted Lee as they travel the South, exposing the unique and unexpected sides of Southern cuisine and culture.
I am sure we can all agree that a fresh-baked pecan pie is synonymous with the south! A few things I loved about Southern Pecan Pie is that it is actually not at all hard to make! It is a single crust pie that can be made to look exquisite thanks to some carefully placed halved pecans, and crimped pie crust. I am by no means amazing at crimping pie so that is something I *must* work on!This easy to make Southern Pecan Pie uses fairly common ingredients, and bakes up to a golden brown perfection in just under 1 hour. Served with a dollop of whipped cream, or even a scoop of vanilla ice cream and you have a dreamy dessert. The best part is you do not have to live in the south to enjoy this dessert!
My family enjoyed a slice of this pie for breakfast and they all loved it! My three kids asked me to make another, and I just might have to do that really soon!The custard sweetness of the pie, paired with the crunchy pecans makes for one tasty pie.
It was so darn delicious–I guess I really should have made two pecan pies since the recipe for this Southern Style Pecan pie is easy peasy! Here is what you will need to make this crunchy and sweet pie:
- 2 cups of Pecans (1 crushed and 1 halved)
- Pie crust dough -1
- 3 large eggs
- 3/4 stick of unsalted butter
- 1 & 1/4 cups of packed light brown sugar
- 3/4 cup of light corn syrup
- 2 teaspoons vanilla extract
- Pinch of salt
Prepare your pie dough *frozen, fresh, or pre-made
Pre-heat your oven to 350
Cover a 9 inch pie pan with 1 pie shell, and crimp the edges; refrigerate
Melt butter in a small saucepan and add the brown sugar and whisk until smooth
Remove from heat and add in extract, corn syrup, and salt; allow to cool for 3-5 mins
Whisk in eggs into the semi-cooled sugar mixture
Remove pie crust from refrigerator and pour 1 cup of pecans into the shell. Add brown sugar mixture in and then use remaining one cup of pecans to decorate the top.
Place into your pre-heated oven and bake for 3o minutes, after 30 minutes, add a pie crust protector for the remaining 20 minutes to prevent the crust from over browning.
Allow to cool, and then serve or place in the refrigerator for a day.
This pie was so delicious and I am certainly going to have to make another for the premiere of Southern Uncovered with the Lee Brothers, Sunday 6/14 at 8/7c! Be sure to watch it because our recipe with be featured on-air!
