This spinach-based salad is fresh, filling, and features a variety of garden-free produce and delicious add ins. It is a lovely play on sweet & savory and will satisfy your taste buds.
The addition of candied walnuts and creamy feta cheese make it a delicious summer salad. We love this spinach salad for lunch & dinner since it contains plenty of nutrients and vibrant flavor.
Strawberry Spinach Salad with Feta
- 6 cups spinach wash, and pat dry
- 6 ounces chicken cooked, diced
- 6 strawberries hulled, and sliced
- 2 tbsps sliced red onion
- 1 tbsp green onion
- 1 small tomato sliced
- 1/2 avocado diced
- 2 tbsps candied walnuts
- 1/4 cup feta cheese
- 1/3 cup raspberry vinaigrette or your favorite light dressing
- Add spinach to a large bowl.
- Add in berries, onions, tomato, and avocado.
- Add in cooked chicken.
- Toss thoroughly.
- Sprinkle on nuts, and cheese.
- Toss gently with dressing.
- Eat right away or chill covered tightly until mealtime.
