With the summer months right around the corner, I have been planning out my children’s summer fun in advance. What day camps will they attend? Will they take swim lessons? What kinds of lunches and meals should I make? While it sounds easy, it is quite the task.
Since I am both a food and lifestyle blogger, you’d think I would have meals under control. But, the truth is, sometimes I am stuck in a meal rut. Grilled meals can only go so far in the summer weather wise, so I need back up plans.

Stuffed shells are a family favorite because they are very versatile. You can fill them with an abundance of cheeses, protein, or even simply veggies. Typically, I added meat, red sauce, and lots of cheese to my shells.
Today however, I wanted the flavors of the the chicken breast and the sautéed veggies to really shine. I opted for cottage and ricotta cheeses, and a dusting of mozzarella. I did not use any pasta sauces to allow the flavor combination to shine.
I don’t know about you but sautéed garlic, onion, and spinach produce the most heavenly smell ever!! This combination paired with the mild cottage and ricotta cheese really make this a ‘lick your plate worthy’ kind of meal. In fact, my 2 girls did just that–the picky boy, not so much!
You could probably even use a rotisserie chicken for this meal. They not only have an authentic grilled flavor, but they saved me a major step of having to pan- cook, or grill chicken. Any time saving kitchen tips are surely appreciated for the hectic summer months!

Irresistible Baked Stuffed Shells with Grilled Chicken, Sautéed Spinach, and Tomato
Ingredients
- 1 1/2 cups Tyson® Grilled & Ready Chicken Strips heated & cubed
- 1 box jumbo shells pasta cooked al dente
- 3/4 cup mozzarella cheese
- 16 ounces cottage cheese
- 16 ounces riccotta
- 1/2 cup cherry tomatoes sliced in halves
- black pepper, onion power, basil, and garlic powder to taste sauteed veggies
- 2 tablespoons EVOO
- 2 cloves garlic minced
- 1 medium onion diced
- 2 cups spinach
- 1 tablespoon fresh parsley for garnish
Instructions
- Boil shells until al dente, then rinse in cool water, and drain.
- In a cast iron skillet, add oil, and saute onion and garlic with the powdered spices for 3 mins.
- Add in spinach and saute for 1-2 extra mins.
- Remove from heat and set aside.
- In a large bowl, add the ricotta and cottage cheese.
- Add in veggie mixture, and diced chicken.
- Combine well.
- Using a spoon, fill each shell carefully with mixture, add to a casserole pan, and repeat until done.
- Top shells with tomato and mozzarella.
- Bake at 350 for 20 mins.
- Top with fresh parsley before enjoying!

This recipe looks delicious bu I will use extra garlic, tomatoes and basil. I do love Tyson grilled chicken strips but there is so much waste in the bag. I buy mine at Aldi, cheaper and less waste.
