Sweet and Salty Spring Chex® Party Mix Recipe

Anyone excited that Spring is finally here? I know I am, but I just wish Mother Nature was on the same page. These rough, below freezing days have got to go! Sunshine, birds chirping, and lots of new plants budding is what I can only dream of!
In the mean time, I suppose staying indoors and busy in the kitchen will have to do until I can get out to garden! You can tell by my cooking, and baking that I want warmer weather because lately, I have been very colorful to say the least! My most recent creation is inspired by the folks at Chex®. They asked me to create a recipe which features one of their iconic Chex products and I was super happy to oblige!
I mean really, we eat this stuff on a normal basis so why not have some creative fun? Since Spring is on my mind, I knew I wanted to make a Chex® Party mix that featured both sweet and salty components, and lots of color! Pastels are really “in” right now so I wanted my Chex® snack to be bright and cheery!
So I decided to make some Sweet and Salty Spring Chex® Party Mix. I am sure my kids are going to come home from school today and get super excited when they each see a little pail of this Eastery goodness on their spots. This Sweet and Salty Spring Chex® Party Mix made quite a bit of servings so I was able to make 8 goodie bags filled for their weekly snacks.
The ingredients I used to make this Sweet and Salty Spring Chex® Party Mix are fairly simple which is great! I am all about simplicity so common ingredients are always a must! I used the following to make one standard sized sheet pan full:
- 2 cups of Gluten Free Vanilla Chex® Cereal
- 2 Cups of Pretzels *you can use gluten free or regular
- 1 bag of Popped Popcorn *I used Ketttle Corn
- 1/2 Cup of Spring M&Ms
- 1/2 cup of yellow & pink candy melts
Prepare a standard sized baking sheet with parchment paper.
Pop your popcorn, and then spread it across the parchment lined pan. Be sure to remove any seeds.
Line pretzels, and Chex® Cereal over the pop corn.
Sprinkle the M&Ms generously over the top of the party mix
In a microwave, melt the candy until creamy. Mine took (3) 20 seconds intervals each, with a quick stir in-between.
Fill 2 separate zippered bags with the chocolate and snip a tiny hole in one corner of each bag.
Drizzle the chocolate over the entire pan evenly, and allow to harden for 30 minutes.
Once the Sweet and Salty Spring Chex® Party Mix is ready, place it in goodie bags, little pails, or in a large bowl for guests to enjoy. This Chex® Party Mix has also been referred to as “Bunny Bait” and would be great to leave out for the Easter bunny!
