Now that the summer is here, I am all about the dinner recipes that I can pair salads with. We typically grill a lot of proteins this time of year on nights when we have extra time.
After our vacation, I packed on some pounds and need to trim some calories from my diet. This Watermelon Feta Salad with Mint and Blueberry is a great salad that is low in fat and high in fiber & nutrients.

Does Watermelon Feta Salad Need Dressing?
Since the fruits in this salad are juicy, I did not even need to add dressing! If you want a little more zest to this salad, you can squeeze in some fresh lime, black pepper, and olive oil.
However, I did not feel like this needed any dressing since my melon & cucumbers were super juicy! I think the sprinkled in feta really balanced the flavors and made this extra tasty!
Can I add Onion to Watermelon Feta Salad?
If you want an extra tasty bite to your salad, adding some thinly sliced red onion would be perfect. I did not add any to mine because my kids do not like onion. I myself could live on onions.
Typically people do not add blueberries to their Watermelon Feta Salad, but since they are native, and in-season now, I thought they would make a yummy option!

Watermelon Feta Salad with Mint & Blueberry
Ingredients
- 3 cups watermelon cubed
- 1 1/2 cups cucumber diced
- 3/4 cup blueberries
- 3 tbsps feta cheese
- 2 tbsps mint sliced thin (about 8-10 leaves)
Instructions
- Chop/dice all your fruit & herbs
- Add produce to a large bowl and toss.
- Chill until enjoying.
