Willow Tree Inspired Chicken Salad Recipe
If you area a true New Englander, or possibly vacationed here, you know that Willow Tree Chicken Salad is some good stuff! It is made with farm fresh all white meat chicken, and has a sweet, creamy taste. Of course no one can ever replicate it’s exact awesomeness, but we can try..right?
Today’s lunch or dinner idea is to make some Willow Tree Chicken Salad inspired by the real deal. Since chicken salad is such a versatile dish, I figured I see if I could at least get the sweet part of Willow Tree Chicken salad down.
I have to say, I did surf the net for some thoughts on how exactly one would attempt to replicate Willow Tree Chicken Salad. The consensus seemed to be that brown sugar was the key ingredient to making this dish a hit.
I have to say, I did try to follow the recipe inspiration closely, but I did cut back on the mayo, and increased the chicken amount. I also love chunky veggies so I diced mine a little larger than called for. You may want to food process the veggies if you really want them fine.
Willow Tree Chicken Salad Recipe Ingredients:
- 1 lb skinless, poached chicken breasts; shredded
- 3/4 cup of mayo
- 1 tablespoon light brown sugar
- 3 tablespoons of finely minced sweet onion
- 3 tablespoons of finely minced celery
- 1/2 teaspoon garlic powder
- salt & pepper to taste
Poach, and shred your chicken breast. Add all your ingredients into a large bowl, and mix thoroughly. Chill for at least one hour prior to serving. This is a gluten free dish. My entire family loved this recipe, and I have added it to make monthly meal rotation. It is very easy, and inexpensive to make. ~Enjoy~

I sent this recipe to my Mom. She moved to California a couple years ago and really misses her Willow Tree. I had never thought to search for it but I’m very glad I found it! I’m sure she will enjoy it.
