Cheese Ravioli Stir-Fry in Peanut Sauce

Ingredients

Peanut Sauce

  • ½ cup creamy peanut butter
  • 3 tablespoons red wine vinegar
  • tablespoons low sodium soy sauce
  • 2 tablespoons light brown sugar
  • 2 tablespoons vegetable oil
  • ½ teaspoon ground ginger
  • 1 teaspoon garlic powder
  • teaspoon cayenne pepper

Stir-Fry

  • 24 ounces Celentano Cheese Ravioli cooked according to package.
  • 1 tablespoon vegetable oil
  • 4 cups broccoli trimmed
  • cups sugar snap peas trimmed
  • 1 large red bell pepper sliced
  • 1 teaspoon sesame oil

Instructions

  • In a small saucepan, combine creamy peanut butter with low-sodium soy sauce, red wine vinegar, vegetable oil, light brown sugar, and spices; stir until blended.
  • Heat peanut sauce pan over medium heat and bring it to a simmer while stirring continuously. Allow it to cook for 2 minutes until it starts to thicken slightly. Remove from heat and set aside until ready to use in your stir-fry.
  • Prepare Celentano Cheese Ravioli according to the package instructions.
  • When you are ready to make your stir-fry, heat a wok or large skillet over medium-high heat and add oil to the pan. Add in the bell pepper strips, broccoli, and sugar snap peas; cook for 4-5 minutes until they become tender.
  • Add in prepared Celentano Cheese Ravioli and combine.
  • Add in the prepared peanut sauce and stir gently to combine all ingredients together.
  • Finish with a scattered teaspoon of sesame oil. Cook for an additional minute until everything is heated through before serving.
