Chicken Cordon Bleu Recipe

Ingredients

  • 2 pounds chicken cutlets sliced in half and pounded with tenderizer
  • 3 large eggs beaten
  • cup seasoned bread crumbs
  • ¼ teaspoon dried parsley
  • ¼ cup grated Parmesan cheese
  • ¾ teaspoon seasoned salt
  • 6 ounces Polish, low-salt ham sliced into quarter-sized strips
  • 6 ounces Swiss cheese

Instructions

  • Preheat your oven to 400°F (200°C) and adjust the oven rack to the center position.
  • In a small bowl, using a fork, whisk the eggs until fluffy.
  • In another shallow dish, add the seasoned breadcrumbs, Parmesan cheese, seasoned salt, and parsley flakes; mix.
  • On a cutting board, carefully half your chicken cutlet to make two pieces.
  • Place one halved piece of the chicken cutlets on the cutting board. Place a piece of plastic wrap over the chicken, and pound cutlet with a meat tenderizer; repeat until all pieces are done.
  • Dip each pounded piece into the egg, and then dredge the chicken in the breadcrumbs, pressing gently to adhere.
  • Place each breaded slice on a parchment-lined baking sheet.
  • Add two slices of ham to each piece as shown.
  • Add two think chunks of Swiss cheese.
  • Roll up chicken tightly with the edges down to keep them rolled tightly.
  • Bake for 25-30 minutes, or until the chicken is cooked through to 165℉ and the breadcrumbs are golden brown. Some cheese may melt out but that is okay.
  • Let the chicken rest for 5 minutes before slicing and serving with prepared Green Giant® Restaurant Style Asparagus, Roasted Red Potatoes & Onions. Enjoy
