Strawberry Spinach Salad with Feta
This spinach-based salad is fresh, filling, and features a variety of garden-fresh produce and delicious meat and cheese add ins. It is a lovely play on sweet & savory and will satisfy your taste buds.
Servings: 4 servings
- 6 cups spinach wash, and pat dry
- 6 ounces chicken cooked, diced
- 6 strawberries hulled, and sliced
- 2 tbsps sliced red onion
- 1 tbsp green onion
- 1 small tomato sliced
- 1/2 avocado diced
- 2 tbsps candied walnuts
- 1/4 cup feta cheese
- 1/3 cup raspberry vinaigrette or your favorite light dressing
Add spinach to a large bowl.
Add in berries, onions, tomato, and avocado.
Add in cooked chicken.
Sprinkle on nuts, and cheese.
Toss gently with dressing.
Eat right away or chill covered tightly until mealtime.
