How to Start a Charcoal Grill
Preparing your charcoal grill for cooking is essential for making the juiciest grilled burgers.
Make sure your grill is clean and free from any leftover meat or grilled food bits.
This helps to control flareups.
Place your grill on a stone patio or somewhere safe. Using your grill on the porch, deck, on grass, near trees, or structures is not safe. We positioned ours in our driveway area near a large, open space.
Remove the grill cooking grate and position the charcoal chimney in the center of your grill.
To start our grill, we did not use charcoal lighter fluid, but we did use a charcoal chimney started. We added paper to the bottom, and filled it to the top with Kingsford Charcoal.
Next, we lit our charcoal chimney. You will see a lot of smoke from the paper but that will wear off as your charcoal heats up. You will know your charcoal is heated up when it produces a silky, grey smoke.
How to Prevent Hamburgers from Shrinking on the Grill
No one likes hockey puck, dried out burgers. To prevent excess shrinkage, and get the juiciest burger we recommend using 80/20 ground beef.
This burger was so juicy and had all the flavors you can expect from a Kingsford Charcoal fueled grill. While the toppings were a bit unexpected on a burger, the fries and lightly dressed coleslaw really were impressive!
We pressed our hamburger into 1/3 lb patties. Then, we indented the center to prevent the burgers from turning into meatballs.
Lastly, you do not want to press down your burgers on the grill because that will remove excess juices, and that is a no-no!
How to Grill Beef Patties
Once the charcoal is heated, empty charcoals into the grill pit. You will see some fire sparks since the charcoal is hot.
Place your beef patties onto the grill. We cooked ours uncovered which helped to prevent super large flareups.
We recommend wearing tight fitting clothing while grilling, and using long grill tools to turn your beef patties. They will flareup a bit so being safe is key.
Our patties took about 8 minutes total time to cook ( 4 minutes per side). We added the cheese during the last minute, and grilled the Italian bread for 20 seconds per side. Any longer will scorch the bread.

- 6 slices cheddar cheese
- 12 slices Italian bread thick sliced from a loaf
- 1/3 cup mayonnaise
- 1 1/2 lbs straight cut frozen french fries

The Best Cheesesteak Burgers
Equipment

- Kingsford Original Charcoal
- Charcoal Chimney
- Lighter
- Grilling spatula
Ingredients
Burgers
- 1 1/4 lbs ground beef 80% lean
- kosher salt & black pepper to taste
- 4 slices cheddar cheese
- 8 slices italian bread thick sliced from a loaf
- 1/4 cup mayonnaise
- 1 1/2 lb straight cut frozen french fries
Coleslaw
- 1 1/2 cups green cabbage, shredded
- 1 1/2 tbsp apple cider vinegar
- 1 1/2 tbsp light olive oil
- kosher salt & black pepper to taste
Instructions
Coleslaw
- Place the cabbage in a bowl.
- toss with apple cider vinegar, oil, and salt & pepper to taste
Burgers
- Bake the french fries in the oven according to the instructions on the package.
- Start a pile of Kingsford Charcoal in the grill for direct cooking. We use a charcoal chimney starter. It's by-far the easiest way to start charcoal fast and evenly.
- Shape and press the beef into 4 even patties. Indent the centers to prevent them from shrinking into meatballs on the grill! Be sure to season them with salt & pepper.
- Once the charcoal is ready, spread it evenly and prepare the grill for the burgers.
- Place the burger patties on the grill and grill them until pink juice stops oozing out the centers – about 6 minutes per side.
- As soon as juices run clear, add the cheddar slices to the patties and give them a minute or two to melt before removing the burgers.
- Toss the italian bread on to the grill for a few seconds per side to add a slight delicious toastiness to the bread!
Build the Burgers
- Spread about 1 tablespoon of mayonnaise on the bread, add the burger patty, 1/4 of the coleslaw, and a handful of french fries.
- Top it off with the second slice of toasted italian bread and enjoy immediately!
