Al Fresco® Buffalo Style Chicken Sausage Pasta Salad with Feta

This past weekend, I tried the most tastiest grilled sausage ever! It was so delish that even my 2 and 5 year old kids were all over it. It is called Al Fresco® Buffalo Style Chicken Sausage, and it is officially going to be on my weekly menu this summer! Think juicy sausage meets buffalo chicken, but with less heat and more flavor = yum! That is pretty much how I feel about this all natural, gluten free chicken sausage.
When you are a busy parent with 3 little ones, making dinners that we can all agree upon is quite the task! One kid might like steak, but the others prefer veggies, and then there is the whole gluten sensitivity issue with my 5 year old. Sometimes I will make this tasty meal and my husband and I like it, but only one kid will eat it. I guess my dog loves those days because she is a professional table scrap thief.
I on the other hand get so frustrated and often do the dishes with such aggravation because my kids are picky little buggers. I put way too much effort into making nutritious meals so sometimes it hurts when they snub them. Pasta, sausage, cheese, and veggies are on their “approved” food list {{excuse me}} so this weekend I prepared a very tasty, easy, and quick meal that was jam packed with both flavor nutrition.
My Buffalo Style Chicken Sausage Pasta Salad with Feta was such a fresh and seasonal creation and welcomed by all. I decided to combine the flavors of a Greek salad with the flair of buffalo chicken. My kids do not like blue cheese crumbles so I used feta which is very similar. The light olive oil and vinegar dressing tied together the fresh veggies, and juicy, grilled Al Fresco® Buffalo Style Chicken Sausage made it delicious! The pasta dressed it up and made it much more of a meal verses a side.
Want to make this Buffalo Style Chicken Sausage Pasta Salad with Feta? Here is what you will need:
- 1 package of Al Fresco® Buffalo Style Chicken Sausage
- 1/4 cup thinly sliced red onion
- 1 cup of grape tomatoes
- 1 medium green pepper chopped
- 1/2 cup white sliced mushrooms
- 1 cucumber chopped
- 1/2 cup feta cheese
- 1 box of pasta (regular or gluten free)
Boil pasta until al dente; rinse under cold water, and drain
Cook halved sausage on the grill 3-5 mins per side on medium heat
Chop and slice veggies, and add them to the drained pasta
Chop up Al Fresco® Buffalo Style Chicken Sausage and add to the salad
Add feta cheese, and dressing *see below
Serve immediately if you prefer warm sausage
Dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons white vinegar
- pinch of salt, pepper, herbs de Provence
Whisk all ingredients, and pour over dish as needed.
This meal was ready in less than 15 minutes and was such a hit! I love quick and easy summer meals because I am not always willing to slave in the kitchen for hours! The best thing about this meal is you can prep the salad and dressing way ahead of time. Just add the hot sausage last for the perfect warm weather dinner!
