Charcoal Grilled Bacon-Wrapped Chicken Tenders with Honey Mustard Sauce

The official start to summer is just three days away, and happens to also fall on Father’s Day this year. To honor the memory of my wonderful father, and celebrate my awesome husband I figured I’d make make a tasty grilled meal and reminiscence on good times. Some charcoal grilled, bacon-wrapped chicken tenders with honey mustard sauce sounded like the perfect meal to enjoy a steamy, hot weekend day.
This year, on Father’ Day we will be traveling so we decided to celebrate for the occasion for the second weekend in a row. We has just ran out of Kingsford Charcoal for our little charcoal grill, and headed to The Home Depot (which is my husband’s favorite store) to pick some up. Since my husband is such a bacon fanatic he requested I make my famous homemade honey mustard sauce and bacon wrapped chicken tenders. He and the kids love this meal because it is super tasty and perfect for warm weather. There is a trick to cooking these tenders just right and that mean keeping a hot and cooler side to the grill. To avoid bacon grease flare-ups, you want to keep one side cooler so that the hot side residual heats it up. Basically, this prevents the chicken tenders from turning into charcoal themselves.
- 1 1/2 lbs of skinless chicken tenders
- 12 slices of thick cut bacon -we used Zaycon
- salt, pepper to taste
- Kingsford Charcoal for grilling
- Brush and oil to grease grill grates
- 1/2 cup regular Mayonnaise
- 2 tablespoons Honey
- 1 tablespoons Dijon Mustard
- 2 tablespoons Yellow Mustard
- 1/2 tablespoon lemon juice
Prepare your charcoal grill using Kingsford Charcoal. Divide the grill into a hot side with the bricks and a cooler side for indirect cooking. You will want to use this method to prevent flare ups fir the bacon fat.
Using a basting brush, coat grill grates with oil to prevent sticking
Wrap bacon around chicken tenders and place on cooler side of grill
Cook until clear juices run free from the chicken flipping once. for about 5 minutes per side
