A sweet & spicy corn salad that is made with fresh ingredients like feta cheese and sweet kernel corn. This delicious side dish looks beautiful and tastes even better. It is the best dish for summer because it will not heat up your home while cooking it, and can be prepped ahead of time.
Grilling season is upon us and that means many of you all with be lighting up those BBQs for dinner later. I know I just love the warmer weather because that means I can bask in the sun and also cook outside! Any reason to soak up the sun and not mess up the kitchen is always appreciated around here.
Since the unofficial start to Summer is right around the corner, I thought it would be fun to share my Zesty Corn Salad with Feta side dish.
This might have a Mexican-flair, but it is very much a fun way to combine the lovely tastes of native sweet corn with the crunch of a traditional salad. Paired with feta cheese, this corn salad is the perfect Summer BBQ side dish.
As mentioned, I made my Corn Salad with Feta recipe and some fresh Honey Corn Muffins.
Ingredients
- 5 ears of sweet corn shucked, and steamed
- 1 small red bell pepper
- 1 jalapeno de-seeded, and minced
- 1 small red onion diced
- 1/2 cup cherry tomatoes cut in half
- 2 tablespoons of cilantro chopped
- juice of 1 lime
- 2 tablespoons of olive oil
- pinch of salt & pepper to taste
- 1/3 cup of feta cheese
Directions
To start off with this easy-to-prepare recipe all you need do is cook your ears of corn either in the steamer, microwave, or on the grill.
Once done, cool, and shuck the corn off the ears. Add it to a large bowl along with the other chopped vegetables, herbs, and cheese. Sprinkle the salad with the oil, pepper, salt, and lime juice and combine until all ingredients are mixed. Store in an airtight container in the refrigerator for at least 2 hours to help enhance the flavors.
Tips
Preparing this salad ahead of time will help the flavors to meld. You can make this up to 24 hours in advance, and enjoy it for up to 4 days.
If using frozen corn, use 2 (12-ounce) bags. Be sure you drain any excess liquid after cooking and allow it to fully cool before mixing with the additional ingredients.
Zesty Corn Salad with Feta
Ingredients
- 5 ears sweet corn steamed, and shucked
- 1/3 cup feta cheese crumbles
- 1 small red bell pepper seeded, and diced
- 1 jalapeno seeded, diced. **Use gloves and caution.
- 1 small red onion peeled, diced
- 1/2 cup cherry tomatoes cut in half
- 2 tbsps. cilantro chopped
- 2 tbsps. lime juice
- 2 tbsps. olive oil
- salt & pepper to taste
Instructions
- Prepare fresh corn ears & cook them according to your preference.
- After your corn has cooled, carefully remove the kernels with a knife, and place them in a bowl.
- Add all your minced/diced/halved veggies into the bowl.
- Squeeze lime juice and add in olive oil, spice, and cheese; stir well.
- Cover salad and allow flavors to meld in the refrigerator for at least 2 hours, and up to 24 hours.

I have never had corn salad that i can remember. I scoured the internet for recipes as i did not have all the ingredients that were used in this recipe but i had most of them. I used frozen corn and used the other ingredients that i did have and i was totally surprised! This was delicious!
