Corn Salad with Feta & a BBQ Feast

Grilling season is upon us and that means many of you all with be lighting up those BBQs for dinner later. I know I just love the warmer weather because that means I can bask in the sun and also cook outside! Any reason to soak up the sun and not mess up the kitchen is always appreciated around here.
Since the unofficial start to Summer is right around the corner, I thought it would be fun to share my Corn Salad with Feta side dish. This might have a Mexican-flair, but it is very much a fun way to combine the lovely tastes of native sweet corn with the crunch of a traditional salad. Paired with feta cheese, this corn salad is the perfect Summer BBQ side dish.
One of my family’s favorite grilled foods happens to be BBQ ribs. While I do love ribs, I am not a huge fan of prepping them because it can be a lengthy process to cut them, marinade them, and then slow cook them. No one wants a tough or overly dried out rack of ribs which is definitely an art of grilling that I have not quite mastered.
Typically, when it is my night to grill, I chose already cooked ribs from Tony Roma’s. They sell them right at my local Walmart, and they make hectic week night meals a breeze. Their ribs and pulled pork products are fully cooked and ready in 20 minutes or less! I love that they can be heated in the oven or grilled which is especially ideal here in New England. One minute it can be sunny here and warm, and the next cold and rainy so having options is wonderful! Plus, they are hard to mess up since each package comes with precise directions.

Since we were having some company, I thought it would be great to serve 3 of Tony Roma’s products which included the: Fall off The Bone Baby Back Pork Ribs, Kansas City Style Tender and Juicy Pulled Pork, and Kansas City Style Premium Cut Boneless Pork Ribs. Each was ready to serve in 20 minutes after heating.
As mentioned, I made my Corn Salad with Feta recipe and some fresh Honey Corn Muffins (recipe coming soon).
- 5 ears of sweet corn shucked, and steamed
- 1 small red bell pepper
- 1 jalapeno de-seeded, and minced
- 1 small red onion diced
- 1/2 cup cherry tomatoes cut in half
- 2 tablespoons of cilantro chopped
- juice of 1 lime
- 2 tablespoons of olive oil
- pinch of salt & pepper to taste
- 1/3 cup of feta cheese
After your corn has cooled, remove the kernels with a knife, and place them in a bowl
Add all your minced/diced/halved veggies in
Squeeze lime juice and add in olive oil an cheese
Chill until serving
This recipe is good with BBQ, alone, or even as part of a taco or burrito filling.
