Some of the meats also come with sauce that is used when you reheat the meat in a skillet. So far, every meat and sauce combination have been phenomenal. I was especially impressed with the Texas Pulled Pork which has me sold! I love pulled pork so much but could never make it as good as Just Meats–it was so darn good!!
Anyhow, to showcase how easy Just Meats makes mealtime, I wanted to share one of my favorite warmer weather salads–BLT Chicken Salad. This meal takes about 10 minutes (or less) to put together and it tastes incredible! The Roasted Diced Chicken was the perfect chicken for this salad because it saved me a major step–cooking! I even used precooked bacon which made this quick and easy!
BLT Chicken Salad Ingredients
Chicken – I used a one-pound package of Roasted Diced Chicken from Just Meats. I didn’t need to heat this up since I wanted it to be cold for the salad.
Bacon – Precooked, smoked bacon was used for this recipe to make it a quick, go-to for dinner and meal prep. You can prepare bacon for this if you prefer a thicker, crispier slice.
Tomato – Halved cherry tomatoes worked perfectly for this salad.
Onion – Green onions were used to bring flavor, color, and taste to the salad.
Sour Cream – I love to add a little sour cream to my creamy salads to cut the richness of the mayo.
Mayonnaise – Adds flavor and creaminess to the salad.
Dijon Mustard – Added a nice tang and flavor to the dressing.
Lemon juice – Cuts the richness of the mayo and sour cream and thins out the dressing.
Spices – Black pepper, onion powder, garlic powder, and salt seasoned this chicken salad perfectly.
How to Make BLT Chicken Salad
Just Meats Roasted Diced Chicken was the star of the show making this dish a quick one. I simply cut through the vacuum-sealed package to release the juicy morsels of perfectly seasoned chicken.
Then, I added the chicken, halved tomatoes, chopped onions, and bacon to a medium-sized mixing bowl.
The mayo, sour cream, lemon juice, mustard, and spices were added.
I mixed everything together, and voila-I had a hearty BLT Chicken Salad that went perfectly on my freshly sliced croissant.
Storing BLT Chicken Salad
As with most creamy salads, this one will taste even better later in the day, or the next day once flavors have time to meld. Simply store the chicken salad in an airtight container in the refrigerator for up to 3 days. Be sure to give the salad a good stir before serving to mix the dressing. While this salad looked creamy, the chicken absorbs the dressing as it sits.
Overall, my family enjoyed this BLT Chicken Salad which will be a summer staple here. Ready in less than 10 minutes, it was the ideal dinner that required absolutely no cooking-a win/win for this bust mom!

Easy BLT Chicken Salad

Ingredients
- 1 pound Just Meats Roasted Diced Chicken
- ½ cup precooked bacon chopped
- ¼ cup red onion
- 2 tablespoons green onion
- ¾ cup cherry tomatoes
- ¼ cup sour cream
- ¼ cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
Instructions
- Add the Just Meats Roasted Diced Chicken to a bow.
- Add the halved tomatoes, chopped onions, and bacon to the bowl.
- Next, add the mayo, sour cream, lemon juice, mustard, and spices.
- Mix everything together, and then cover the bowl tightly and place it in the refrigerator until serving.
