Low Carb Takeout Inspired Italian Sub/Hoagie Salad Recipe
Now that I cannot depend on takeout as much as I used to, I have been trying to create meals that use no gluten, but still have familiar tastes. One of my top five foods are Italian grinders. You may know then as “subs” or hoagies depending on where you live, but around here we call them grinders. I love everything about an Italian Grinder, but now that I cannot really have bread hanging around the home, I decided to think outside of the box, and turn my love for my local takeout grinder into a salad. Introducing the Low Carb Takeout Inspired Italian Sub/Hoagie Salad.
If you love Italian sliced deli meats you can be even more creative and perhaps add some mortadella, prosciutto, or capicola. My kids are not much fans of those Italian grinder staples so I stuck with a meat they do like which happens salami. I sliced some salami, and provolone, and added it to a a salad that encompasses what one would typically add to an italian grinder. It would have been better with some bread, or croutons, but this is the low carb version!!
Here is what you need to “deconstruct” that Italian sub, hoagie, or grinder, and turn it into a low carb salad:
- 1/3 lb salami
- 1/3 lb provolone cheese
- pickled pepperocini peppers
- lettuce
- black olives
- red onion
- tomato
- oil & vinegar based dressing
Directions:
Prepare your salad, and add your chopped meats and cheese; garnish with a pepperocini, and a bit of oil and vinegar–that’s it! I really hope your family tries, and enjoys this Low Carb Takeout Inspired Italian Sub/Hoagie Salad Recipe!
