How to Make Pistachio Cake

When my father was still alive, anything pistachio flavored were his favorite treats. My mom would make this special Pistachio Cake to satisfy his love for all things pistachio. I guess my love for all things pistachio was inherited from him which is okay, because I love the flavor!
Here is how to make Pistachio Cake:
Ingredients:
- 1 box of white cake mix
- 1 package of pistachio pudding mix
- 4 eggs
- 1 cup of water
- 1/4 cup of oil
Directions:
Preheat your oven to 350.
In a large bowl, combine powdered ingredients, eggs, oil, and water; combine until mixed.
Pour into a greased bundt cake pan and bake for 45 minutes.
Allow cake to fully cool before glazing

A simple glaze frosting works best for Pistachio Cake. I made this glaze even better by adding crushed pistachios to it before pouring it over the finished cake. The nutty crunch from the pistachios combined with the sweet glaze is an amazing combination!
Here’s how to make the glaze:
Glaze Ingredients:
- 1/2 cup of confectionery sugar
- 4 ounces of room temperature cream cheese
- 3 teaspoons of milk
- 1 tablespoon of lemon juice.
- 1/4 cup crushed pistachio nuts.
Glaze Directions:
- Mix all ingredients (except the crushed pistachios) until fully combined.
- Allow mixture to sit for 5 mins to thicken.
- Pour the glaze onto the cooled cake.
- Sprinkle the crushed pistachios on top.
