I love early summer in New England. When we have temps in the 90’s, all I want to do was sit outside and soak up the sun.
You have no idea (or maybe you do) how tempting it is to skip dinner and just lounge outside with some good drinks and appetizers. I know I cannot wait to grill some goodies and enjoy the outdoors with the company of my family.
Plus, any recipe that uses cheese is a winner in my book. Kind of like these Easy Cheddar Biscuits!
What are the best chips for Queso?
The best chips for dipping into a cheesy queso dip are tortilla chips – hands down. Our favorite tortilla chips are Mission Tortilla Chips. We always have a bag or two on hand for entertaining!

This white queso is made on a stovetop with fresh and simple ingredients.
Stovetop Queso Blanco can even be made ahead of time and reheated when your ready to eat.
It will turn back into a more solid state after it cools, but can be melted back down on the stovetop on a low simmer, or in the microwave. Better yet you could keep it warm inside a slow cooker on low.
In fact, I actually like it better the next day because the flavors really meld together well.
How to Make Queso Blanco?
All types of queso are pretty much made the same way. This recipe uses white American Cheese. We like the smooth, mild creamy texture of American cheese, but you could also use a white Monterey Jack or White Cheddar.
The key is to use a block of cheese and shred it at home. If you buy pre-shredded cheese, the anti-binding ingredient in it will prevent your dip from becoming velvety smooth.
The vegetables (onion, garlic, etc…) are sautéd first to soften them and bring out their flavors. Then the milk, flour and cheese is added over a low-medium heat.
Warning:
If you have the heat of your stove set too high, you risk burning the ingredients.
This recipe is for a mild queso, but if you want it to be spicy, add some diced Jalapeños to the sauté step.
Ingredients:
- 1 1/4 lbs block American Cheese, shredded
- 1 cup whole milk
- 1/2 tablespoon flour
- 1 medium tomato diced
- 2 tablespoons white onion diced
- 2 cloves garlic minced
- 1 tablespoon EVOO
- 1/4 tsp each of chili powder, & onion powder
Directions
Making queso is pretty easy…
- In a medium skillet, add oil, garlic, and onion and sauté for 3 mins on medium heat until slightly golden brown.
- Turn the heat down to medium-low.
- Add the milk, and flour (whisk until flour is combined).
- Slowly add the grated cheese and whisk until melted.
- Add in cilantro and tomato combine and keep the skillet on warm until serving.

Little decorative items around the deck give it a fun feel. At night, we sit around the fire pit and enjoy a good drink and maybe s’mores.
