It was only natural that I wanted to try the Cooper Cheese spin on this delicious melt. I know you all love hot and cheesy dips so this recipe is going to need to make it to your BBQ, or summertime parties ASAP!
Sure, Corned Beef Reuben usually features melted swiss cheese, but I assure you that this recipe made with Cooper Sharp American Cheese is all you need to excite EVERY taste bud in your mouth.

What Kind of Cheese is Cooper Sharp?
Cooper Sharp Cheese is an American Cheese like no other. It is made with just 7 ingredients which include milk, water, cream, salt, sodium phosphate, cheese culture, and enzymes. These ingredients come together to make the creamiest cheese that has been made for over 100 years!
You can find Cooper Cheese in stores like Shaw’s Supermarkets, BJ’s Wholesale, Hannaford, Seabra, and Price Rite to name a few. It is available in Sharp White, Yellow, and Cracked Black Pepper.
So, now that you know how delicious Cooper Cheese truly is, let’s explore how it makes this Hot Reuben Dip THE BEST HOT DIP EVER!!
Reuben Dip Ingredients
- 1 1/2 cups of Cooper Sharp White American Cheese (shredded with grater)
- 1/2 lb deli corned beef
- 8 oz of cream cheese, softened
- 1 cup sour cream
- 1/2 cup drained sauerkraut
- 2 tbsps spicy brown mustard
- 2 tbsps ketchup
- 8 slices rye bread
How Do You Make Reuben Dip?
Making Reuben dip is as easy as adding half the Cooper Sharp White American Cheese, plus all the other ingredients to a large bowl and then mixing until combined.
Then, add the mixture to an oven-safe baking dish and top with the remaining half of Cooper Sharp White American Cheese.
Bake for 25 minutes as 350 degrees f. Once the dip is bubbly, turn on the broiler to toast the top cheese for 2-3 minutes (less if your oven rack is at the high position. Mine was on the middle rack).
We served ours with toasted marbled rye squares we made in the oven (see recipe card below).
The dip was so stinking delicious that everyone requested seconds! If you are making this for a large crowd, I suggest DOUBLING the ingredients!
Can Reuben Dip be Reheated?
Yes, you can easily reheat reuben dip for 1 minute per serving less in a microwave-safe bowl/dish/plate.
Can You Freeze Reuben Dip?
Yes, you can freeze reuben dip. I suggest freezing (precooked). I have made several warm dips in the past like buffalo chicken dip and have easily cooked them from frozen. You will need to cook your dip for 35-40 mins and optionally broil it.
You must store it in an airtight freezer pan. For safety, I only use disposable aluminum pans so they will not shatter from freezer to oven.

Hot Reuben Dip
Ingredients
- 1 1/2 cups Cooper Sharp American Cheese shredded
- 1/2 lb Corned Beef deli style, cut into small strips
- 8 oz. Cream Cheese room temperature
- 1 cup Sour Cream
- 1/2 cup sauerkraut drained
- 2 tbsps spicy brown mustard
- 2 tbsps ketchup
- 8 slices Rye Bread marbled
Instructions
- Preheat the oven to 350 degrees f.
- In a large mixing bowl, add the cream cheese, sour cream, half the Cooper Cheese, the spicy mustard, sauerkraut, corned beef, and ketchup.
- Mix until well-combined.
- Add mixture to an oven-safe dish.
- Add the remaining Cooper Cheese.
- Bake for 25 minutes.
- Broil for 2-3 minutes until toasty brown and bubbly.
- Serve with toasted Rye pieces.
Rye Bread Toasts
- Remove all crusts from the marbled rye bread.
- Cut slices of bread into 4 toasts; repeat until all bread is cut.
- Add bread to a parchment-lined baking sheet.
- Bake each side for 4 minutes at 350.
- Store in an air-tight container to serve with the Hot Reuben Dip.
