This depends on how much buttermilk you left behind in the butter. That is why it is very important to rinse and manipulate and rinse your butter with ice water to remove the milky substances.
First, pour the heavy cream into the bowl of your stand mixer fitted with the whisk attachment. Then, turn your mixer on low speed, and gradually increase the speed to medium. Let it run until the mixture thickens and becomes lumpy.
Once the mixture has thickened, increase the speed of your mixer to high and continue mixing until the mixture becomes even thicker and forms soft peaks.
