Have you ever heard of the saying “The way to a man’s heart is through his stomach?” Well, for my husband and dad that couldn’t be any truer! Jared simply LOVES when I make easy brunch recipes like these LOADED Breakfast Quesadillas. If you are pondering what to prepare that special guy/dad in your life for a Father’s Day brunch –or maybe even brinner? These are exactly what they need in your life!
Ingredients
Before starting this recipe, you’ll want to verify that you have the following ingredients:
Jimmy Dean® Fully Cooked Original Pork Sausage Patties – Available in 8-count packages, these fully-cooked sausage patties are ready in seconds! Made with quality ingredients, they have a satisfying savory taste we all love!
Jimmy Dean® Applewood Smoked Premium Bacon – This quality-made, scrumptious bacon has the BEST flavor ever!! I love how each slice cooks up perfectly (even in the microwave).
Eggs – We scrambled our eggs with whole milk, salt, and pepper. The key is to cook your eggs with butter or ghee over medium heat. A rubber spatula to stir is the best tool to ensure fluffy eggs.
Cheese – Our kids love melty cheese so I used a “grilled cheese” blend cheese slice product I found at Shaw’s. You can also use shredded cheese blends, or even American cheese. The beauty of these quesadillas are they are pretty forgiving with cheese type.
Spices – Since the Jimmy Dean® products have lots of savory flavor, you only need salt & pepper to taste for the eggs.
Tortillas – We used 8″ flour tortillas for this recipe. You can use larger 10″ if you want as well. I wouldn’t go any smaller though since these are filling-heavy and smaller sizes might not be able to support them.
Butter/Ghee – Toasted these quesadillas requires a butter product to get that much-desired toasty look, feel, and flavor.

Equipment and Supplies Needed
We used the following equipment and supplies to make this recipe. Items that are optional or can be substituted will be noted.
- Small Skillet – To cook the scrambled eggs.
- Whisk – To combine the eggs, milk, salt, and pepper.
- Microwave – To cook the bacon & heat the sausage patties.
- Microwave-safe plate – To cook the bacon.
- Griddle – To toast the quesadillas.
Directions
Prepare the scrambled eggs, cook the bacon, and heat the sausage.
Lay a flour tortilla flat and add two slices of cheese, or 1/4 cup of shredded cheese to the right side of the tortilla only.
Split one Jimmy Dean® Fully Cooked Original Pork Sausage Patty and place it on top of the cheese.
Add 2 strips of cooked Jimmy Dean® Applewood Smoked Premium Bacon to the tortilla.
Fold over the left side of the tortilla to make a half moon shape.
Add quesadilla to a buttered griddle and cook for about 3 minutes per side on medium heat. You want the tortilla to have golden-brown spots with melty cheese inside. Flip the tortilla once to brown the opposite side.
Once toasted, slice the quesadilla once down the center.
Serve with your choice of sour cream, salsa, and avocado. If you like cilantro, it also tastes really good with these!
Recipe Tips
This recipe is easy to make if you know the right tips and tricks! Here are my tips for ensuring your Breakfast Quesadillas comes out perfectly.
Cheese
Cheeses that melt easily are the best kind for breakfast tortillas. We used grilled cheese style slices, but you can use American Cheese, Shredded Mexican Blend, Cheddar, Pepper jack cheese, or any cheese you love. The key is to simply use a blend that will melt quickly.
Tortillas
We used 8″ sized tortillas for this recipe. I do not recommend using smaller sized tortillas because they will not be able to hold the toppings successfully. You can use what or any wraps that are lower in carbs. The style/flavor you use is pretty flexible!
Fillings
You can add salsa, sour cream, guacamole, avocado, peppers, onions, or any fresh herbs you might enjoy. I have found that fillings/toppings that go well with omelets also pair well with these quesadillas.
Storage
If you want to store your Breakfast Quesadillas, just follow these easy steps.
Refrigerator
These Breakfast Quesadillas are best when enjoyed warm and straight off the griddle (once cooled a bit). However, you can store any leftovers in the refrigerator for up to 24 hours. The tortilla will be soggy but can be heated on the griddle or in a toaster oven for 3-5 minutes to crisp it back up a bit.
Freezer
These can be frozen one of two ways for best results.
You can freeze the eggs, bacon, and sausage alone. Simply prepare and freeze once cooled. Store in the freezer for up to 3 months. To prepare a quesadilla, allow the ingredients to thaw safely in the refrigerator before adding to a fresh tortilla and griddling.
Additionally, you can cook the quesadillas and allow them to cool. Place them on a baking sheet and freeze for 3-4 hours until frozen throughout. Wrap them in several layers of plastic wrap, place them in an airtight freezer bag, and store in the freezer for up to 30 days. To prepare, warm tortillas in the microwave, or in a toaster oven until warm and crisp.
Recipe
Follow the recipe below to make Breakfast Quesadillas! This recipe makes 2 SERVINGS, but you can easily adjust the recipe card for other serving sizes.
Bacon, Egg, and Cheese Breakfast Quesadillas

Instructions
- Add bacon strips to a paper towel-lined microwave-safe plate. Cook bacon for 5-7 minutes or until crisp.
- Add eggs, milk, salt, and pepper to a medium-sized bowl and whisk until light and fluffy. Add one tablespoon of butter to a small skillet and cook eggs over medium heat. Use a rubber spatula to stir the mixture until fluffy eggs ribbons begin to form. Once eggs are cooked, remove from heat and set aside.
- Add sausage to a microwave-safe plate and heat for 30-45 seconds or until warmed.
- Add one tablespoon of butter or ghee to a griddle and heat to 400°F.
- Add cheese slices and topping to the right side of the tortillas. Fold over the opposite side, and place on the heated griddle. Cook for 2-3 minutes per side or until tortilla is golden-brown and cheese is melted.
- Remove quesadillas from the heat and slice them in half down the center. Serve with your choice of toppings.

Great idea! Tasty conception. I will add however that you can use (real) mayonnaise in place of ghee or butter to acquire a sure and even browning of the outside of the tortilla. Mayo also works fabulously on grilled cheese or other grilled bread surfaces. ENJOY!!
