I don’t know about you, but there is nothing more comforting than a bowl of soup on a chilly day. During this time of year, I love to start a pot of soup early in the day and let it simmer on the lowest heat until dinner. My family just loves stews, bisques, and soups so much! Paired with a little crusty bread and you have the perfect cold-weather meal to fill a belly up and soothe a soul.
Making meals my own and putting spins on classics is what my cooking style can be best described as.

That is why I thought it would be awesome to swap out white meat chicken breast for al fresco Roasted Pepper and Asiago Cheese Chicken Sausage.
We all know that October is Breast Cancer Awareness month. The folks at al fresco are encouraging people like you and I to create warm, and comforting meals for those affected by breast cancer.
My great-grandmother died from this evil disease when I was only 8 robbing me from a longer relationship with her.
Something as small as a pot of Chicken Noodle Sausage Soup will not cure breast cancer, but it will show those affected that you care, and want to make a difference during their fight. Plus, al fresco Chicken Sausage is fully cooked and chicken, but better! The flavors in the Roasted Pepper and Asiago Cheese Chicken Sausage complemented my soup so perfectly and had all my family members asking for more!
Unlike white-meat chicken breast, this chicken sausage was not bland or on the drier side. It is afterall chicken, but just way better!

It is pretty quick to make if you don’t want to simmer it all day and it provides plenty of leftovers which are a blessing in itself.

Find al fresco Chicken Sausage products in your grocer’s sausage/deli meat refrigerated section.
Chicken Noodle Sausage Soup
Ingredients
- 1 package al fresco Roasted Pepper and Asiago Cheese Chicken Sausage quartered
- 2 cups water
- 60 ounces chicken broth
- 8 ounces egg noodles
- ground black pepper to taste
- 4 large carrots sliced 1/2 inch thick
- 4 large celery stalks slice 14/ inch thick
- 1 medium sweet onion sliced thinly
Instructions
- In a stock pot, add water, stock, diced veggies, and chicken sausage. Bring to a boil. Once to a rapid boil, stir in egg noodles-season to taste* and simmer for about 70 minutes on low heat. Veggies should be fork tender. Soup is best as it sits so making it ahead of time is ideal. This made enough for 2 meals and lunches the next day!
