- 20 ounces canned, crushed pineapple with juices drained
- 1 1/2 cups of red cabbage shreds
- 1 large mango diced
- 2 tablespoons chopped cilantro
- 1/3 cup light mayo
- 2 tablespoons apple cider vinegar
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
How to Make Pineapple Mango Slaw
This sweet & savory taco slaw is delicious and goes so well with the traditional flavors in the Mild Mexican Style al fresco Chicken Sausage. You simply add all the ingredients to a large bowl, mix well, and store in the fridge for at least 2 hours so the flavors can nicely meld.
Mexican Style Chicken Sausage Tacos Add-ins
These tacos are loaded with color and flavor to boot! I love that the nature of tacos is that almost any topping can go! Here are some of the toppings we added to this taco recipe that went perfectly!

Chicken Tacos with Pineapple Mango Slaw
Ingredients
Main Tacos
- 10 oz al fresco Mild Mexican Style Chicken Sausage sliced into coins and heated
- 12 taco shells flour, street taco style
- 2 tbsps cilantro chopped
- 1 jalapeno seeded, & diced- use caution, where gloves
- 1 cup sweet corn kernels cooked
- 1/2 cup Queso Fresco cheese
Pineapple Mango Slaw
- 20 oz crushed pineapple canned, juices removed
- 1 1/2 cups red cabbage shredded
- 3/4 cup mango diced, one large
- 2 tbsps chopped cilantro
- 1/3 cup light mayo
- 2 tbsps apple cider vinegar
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
Instructions
Pineapple Mango Slaw
- Prepare all the veggies/herbs/spices.
- Add all the ingredients to a large bowl.
- Stir to combine, and add slaw to an airtight container.
- Allow flavors to marinate for at least 2 hours.
Tacos
- Warm taco shells for 3-5 minutes in a 300 degree oven.
- Heat chicken sausage, and set aside.
- Prepare all your toppings.
- Stuff tacos with slaw, and any add-ins you prefer.
- Swizzle with hot sauce or sour cream & enjoy!
