I don’t know about you all, but lately, I feel like I need an extra 8 hours in the day. Between working at the school, running my businesses, and moving into a new home–I admit, it is hard to cover it all with excellence. To shave some time off my day, I have been turning to easy meals that start with frozen foods brands we all love.
Our Favorite Mexican Burritos
One of our favorite, easy Mexican Burritos to serve for lunch or dinner are El Monterey® Signature Steak & Cheese Burritos. These are available at stores like Walmart and come in packages of 8 or 12. Since we’re a family of 5, I typically go with the pack of 12 which can feed us all with leftovers. I have been a fan of El Monterey® frozen Mexican foods for years. My kids love their breakfast burritos, chimichangas, and even their taquitos and snacks.
As a mom to three, I love that they can be effortlessly on the dinner table to accompany sides we love in minutes. You can microwave them, air fry them, or oven-bake them. Since I have been buying this brand for years, I came up with a tasty hack. I microwave them according to the package instructions and then I put them on a buttered skillet to crisp them up. This burrito cooking hack has my kids raving for more!
Best Meaty & Cheesy Frozen Burritos
We love all of the El Moneterey® line of burritos, but the El Monterey® Signature line of shredded steak, cheese, & rice burritos were so good! They were loaded with tender meat, melty cheese, and the perfect amount of seasoned rice, and veggies. In fact, they make such a good short-cut burrito for Mexican nights around here, because I don’t have to worry about cooking multiple fillings to stuff into my own tortillas. I also love the value, coming in at around $15 for 12 burritos!!
Best Burrito Sides & Toppings
For our easy Mexican-themed dinner, I served our favorite fresh burrito toppings with sour cream and hot sauce. I like to mix up which sides I serve with our burritos, but for this meal I went with mostly produce additions.
Burrito Toppings
- Salsa (pico de gallo, tomatillo salsa, verde salsa)
- Hot sauce
- Guacamole
- Sour Cream
- Cheese (shredded cheddar, Monterey Jack, or blend)
- Lettuce (shredded romaine or iceberg)
- Diced tomatoes
- Chopped onions (red or white)
- Cilantro
- Jalapeños (sliced or chopped)
Burrito Sides
- Spanish Rice
- Refried Beans
- Mexican Corn (Esquites)
- Mexican Salad
- Nachos
- Guacamole and Chips
- Black Bean Salad
- Taco Soup
- Queso Dip
