Ingredients
Ground beef, onion, yellow bell pepper, taco seasoning, taco sauce, pinto beans, shredded cheddar, and crushed nacho chips are needed to make this hearty dish.
How to Make Nacho Pie
In a large skillet, brown the onion with the diced onion, and pepper with taco seasoning. Drain any excess fat.
Add the cooked beef and vegetable mixture to the bottom of an 11 x 9 casserole dish.
Rinse pinto beans and add them to the top of the beef layer.
Pour taco sauce on top of the beans.
Add a thick layer of shredded cheddar, followed by crumbled Doritos.
Bake at 350 degrees F. for 12-15 minutes or until cheese is melted. If you do not like toasty Doritos, you can add them after the pie comes out of the oven.
Recipe Swaps
Beans – I used rinsed pinto beans but you can also use black or kidney beans as long as you also rinse them. Chili beans, and ranch beans can also be used in this fiber-rich recipe.
Rice – If you want to further stretch this recipe, consider adding 4 cups of white rice to the pie. I would add the rice layer between the ground beef and beans layer.
Sauce – If you do not have taco sauce on-hand, you can use mild salsa, or enchilada sauce.
Cheese – Shredding my cheddar cheese block in my food processor was a great choice. It allows the cheese to melt better since there are no binding agents in the freshly shredded cheese. If you prefer a different cheese, Monterey Jack, Pepperjack, and Mexican blend all work well.
Meat – You can also use ground turkey, or meat crumbles as a substitute.
Spices – If you do not have taco seasoning, you can use fajita seasoning as well.

Leftovers
