You may recall that I shared an amazing 3 ingredient peanut butter cookie recipe a few weeks ago. That recipe has been doing amazing on Pinterest, and has been saving a ton of people time prepping cookies in the kitchen.
While those cookies are truly amazing, I have found the perfect flourless peanut butter cookie recipe that is more along the lines of traditional flour recipes. I know that sounds a bit strange, but I am totally not kidding here! My gluten free Flourless White Chocolate Chip Peanut Butter Cookies are so delish that you just have to try them for yourself!
Flourless Peanut Butter Cookies
A few things I really love about this recipe is that first and foremost they are flourless, and gluten free. I find them a bit more fluffier than my 3 Ingredient Peanut Butter Cookies so that is also a pleasant change.
I also love the way the peanut butter complements the white chocolate chips. It is a nice flavor the two bring each other, and very tasty versus the more traditional use of semi-sweet chocolate morsels.
Ingredients
- 3/4 teaspoon of baking soda (gluten free)
- 1 cup peanut butter (I used Skippy Natural)
- 3/4 cup white chocolate morsels
- 1 tablespoon of vanilla extract
- 1/8 tsp salt
- 3/4 cup brown sugar
- 1 large egg
How to Make these Easy Cookies
*Yields about 18 cookies*
Preheat your oven to 350 degrees Fahrenheit.
Add the peanut butter, egg, and brown sugar to a stand mixer, or bowl and combine until creamy over medium speed.
Add the baking soda, salt, and extract and combine.
After the mixture is thoroughly mixed, fold in the white chocolate chips.
Line two smaller cookie sheets (or one large cookie sheet) with parchment paper.
Using a tablespoon cookie scoop, form the dough (very easy to work with) into 1 1/2″ balls.
Gently press them down with a fork to make a cross hatch.
Bake for 8-10 minutes.
