6 years ago, my whole life was changed when my youngest daughter was diagnosed with allergen issues. Her body had a hard time processing wheat products caused by a gluten-intolerance. It was a blessing to discover what was wrong with her but a stressful time too. I had only known conventional foods my entire life, and then it changed so quickly. She could not eat many of her favorite foods.
The gluten-free world was so different 6 years ago. It was extremely difficult to eat out because many restaurants had no idea what gluten-free even meant–nevermind gluten-free food preparations.
We were restricted to about 3 places we could eat and my daughter was not a happy camper.
I would head to the grocery store to buy her snacks and there was the tiniest section of foods that tasted just like card board.
Fast forward, 6 years, and, my, have things changed for the better! So many top notch brands have now started to realize the demand for safe, gluten-free foods.
Now, we have so many choices for foods we can eat and my daughter has not complained once since!
Anyone who knows my daughter can attest that she loves savory foods and snacks much more than sweet treats. I guess she takes after her mom because she will go straight for the cheese, and salty snacks versus the chocolate or cake. One of her favorite cuisines is Mexican-inspired foods.
Now that we tried Mission Gluten Free Tortillas, we are all hooked! We used to be restricted to corn tortillas but we were not really fans of the taste. Thankfully, Mission’s Gluten Free Tortillas taste just like regular flour tortillas!

These wheat-free, certified gluten-free, and Kosher tortillas are best when served warm. That makes them the perfect base for my Gluten-Free Cream Cheese Chicken Quesadillas. For best results, heat tortillas on an ungreased skillet over medium-high heat for 10 to 15 seconds. Flip and heat for another 5 to 10 seconds. You can also microwave by placing 4 to 6 tortillas between two damp paper towels. Microwave for 30 to 45 seconds or until heated through.
I bet you’ve never tried a Cream Cheese Chicken Quesadilla, but today, I want to encourage you to try them!
They are SOOO good and so much easier to prepare versus chunky chicken quesadillas which can get messy.

Heat grill and then cook chicken breast until clear juice run free from each side
Once chicken is done, slice it into smaller pieces.
Puree in a food processor with cream cheese until fine and spreadable.
Heat oven to 350 degrees.
Lay out tortillas on 2 baking sheets.
Spread 4 with cream cheese chicken mixture.
Sprinkle with veggies, and cheese.
Bake for 2-3 mins per side until golden brown.
Serve with dipping sauce.
Spicy Dipping Sauce
Combine yogurt and sauce until well combined. Serve Chilled with your Cream Cheese Chicken Quesadillas.

Oh my gosh this is perfect! Even though I am not gluten-free I’m trying to cut down a bit I l love tortillas so much.

OMG one of my favorites there delicious and perfect for lunch of dinnertime. I always use the gluten free sour cream instead of cream cheese.
