Living with a child that has a gluten sensitivity is not that easy at times. I find myself running in circles at the grocery store trying to find snacks, meals, and ingredients that she can eat. Typically, I cook most of our meals from scratch but I am human and some days I just do not feel like cooking. I was spending a ton on pricey gluten-free frozen meals for my daughter that she didn’t care for until I came across some new flavors of gluten-free meals from LEAN CUISINE®.
When your five year old has a dietary restriction, the last thing she wants is unsavory, and unappealing foods. My daughter actually loves bold flavors, and spice. Sadly, she was finding most convenience style gluten-free meals to be cardboard-like, and simply unappealing. Thankfully, to my surprise she LOVED the protein packed and gluten-free Marketplace Sweet & Spicy Korean-Style Beef and Marketplace Comfort Chicken in Sweet BBQ Sauce (which is also gluten-free) and made by LEAN CUISINE®.
We recently made a trip to our local Walmart store to pick up some groceries. While we were there, we headed to the frozen isle to check out some of the latest LEAN CUISINE® meals. We purchased LEAN CUISINE® Marketplace Vermont White Cheddar Mac & Cheese which is made with organic pasta. My other two children LOVE mac & cheese so this meal is ideal for them.
Besides their tasty, bold flavors, and overall meal quality, I love that I can head to Walmart and quickly and inexpensively pick up “better for you” meals for my kids in one easy to find place.

Now that you know about two of my daughter’s new favorite gluten-free meals, here is one of her favorite gluten-free snacks that I made weekly–sometimes even twice weekly! This easy to make Cinnamon Vanilla Rice Pudding is sure to please everyone who loves a creamy pudding with some tasty texture!
Ingredients to make Cinnamon Vanilla Rice Pudding:
- 1 cup organic sugar
- 1 cup minute style rice
- 1 tablespoon of cinnamon
- 1 tablespoon of vanilla extract
- 3 cups of whole milk
- whipped topping *optional
- 2 eggs
Bring 1 cup of rice and 3 cups of milk to a slow boil over medium heat-stir constantly. Once milk begins to bubble, reduce heat to medium/low and stir occasionally for 10 minutes; rice will expand.
Remove rice from heat and quickly stir in vanilla and one egg at a time. You must do this swift and get it well combined or the eggs will scramble. Mix in cinnamon and allow to cool in servings dishes for at least 20 minutes-this will also help thicken the pudding a bit. Serve with optional whipped topping and additional cinnamon if requested.
By using quick “minute-style” rice, this recipe can be made in about 15 minutes and serves 5. Paired with the LEAN CUISINE® the gluten-free Marketplace Sweet & Spicy Korean-Style Beef and Marketplace Comfort Chicken in Sweet BBQ Sauce and you have a gluten free meal and snack!
