This recipe is perfect for two people. I decided to make it just for my husband and I because I knew the kids would snub it. They prefer their lemons in lemonade-haha!
Chicken Dinner for two
If you prefer smaller portion meals, you will appreciate this lemon chicken recipe. Chances are you will not have a ton of leftovers since it doesn’t make a ton!
I used 1 lb. of white meat chicken which equated to two standard sized portions cut in half. I also halved the lemon sauce ingredients to compensate for the smaller serving size. Below you will find all you need to know about making this meal for two.
Lemon Chicken Ingredients
- 1 lb chicken breast 4 smaller breast pieces
- 1/4 cup white flour
- 4 tbsp. butter
- 2 tbsp. extra virgin olive oil
- salt & pepper to taste
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp. honey
- 1/4 cup chicken stock
- 2 tbsp. lemon juice
- 1 lemon sliced into 8 discs
- 1 tbsp. fresh parsley
How to Make Lemon Chicken
The first step to make lemon chicken in a skillet is to gather your ingredients and supplies. Gather a large skillet pan, two bowls for servings, a pair of tongs, plate, and small stock pot for your mashed potatoes.
Season chicken with salt and pepper and then dredge in a flour. In a large skillet, heat 2 tablespoons of oil and 3 tablespoons of butter over medium heat. You do not want the butter to burn.
Add chicken to the frying pan and season with salt, pepper, garlic & onion powder. Pan fry for 3-5 minutes per side or until internal temperature reaches 165 degrees Fahrenheit. Chicken should be golden brown and have a crunchy outer.
Once chicken is cooked, add it to a separate dish and loosely cover.
In a stock pan, add 1 tablespoon of butter, honey, lemon juice, lemon slices, and chicken stock. Heat until a boil, and then simmer for 1-2 minutes.
Add potatoes or rice to two bowls and then add chicken. Top with extra sauce and enjoy warm!

Make Honey Lemon Chicken
While this recipe does contain honey, it is hardly enough to call it honey lemon chicken.
If you would like to dial up the sweetness of this chicken, add 1/4 cup of honey to step 8 when you make the sauce.
Lemon Chicken for Two

Ingredients
- 1 lb white meat chicken 4 smaller breast pieces
- 1/4 cup all-purpose flour
- 4 tbsps. unsalted butter divided
- 2 tbsp extra virgin olive oil
- salt & pepper to taste
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp. honey
- 1/4 cup chicken stock
- 2 tbsp. lemon juice
- 1 large lemon sliced into 8 discs
- 1 tbsp parsley fresh
Instructions
- Season both sides of chicken cutlets with salt and pepper. Dredge each piece of chicken in flour.
- In a large skillet, over medium-low heat add 3 tablespoons of butter and olive oil; allow butter to just melt.
- Add chicken to the skillet and pan-fry for 3-5 minutes per side or until internal temperature reaches 165 degree Fahrenheit. Chicken should be golden brown and have a crunchy outer.
- Once chicken is cooked, add it to a separate dish and loosely cover with foil.
- Prepare instant mashed potatoes, or rice/side.
- In a stock pot; add 1 tablespoon of butter, honey, lemon juice, lemon slices, and chicken stock. Heat until a boil, and then simmer for 1-2 minutes.
- Add the mashed potatoes/rice to two bowls. Then top with chicken and finally the sauce.
- Sprinkle bowls with fresh parsley and enjoy!

You say to sprinkle the chicken with the onion and garlic powder while in the frying pan – but in the actual recipe you list both, but don’t mention when to use. Do you sprinkle while frying or do you add to the flour before breading
You can sprinkle breasts before, or add the seasoning to the flour-either way would work here.
